- Heat oil in large skillet for medium heat. Add in diced onions sprinkle a pinch of salt and sauté until soft.
- Remove the skins from the tomatoes. Cut into cubes, add to the sautéing onions.
- To this add paprika and roasted cumin powder.
- Sauté and cook until tomatoes turn soft and have a loose sauce. It will at least take 15-20 minutes.
- Create small wells in the sauce using backside of the ladle or wooden spoon for each egg.
- Crack the eggs one at a time into these wells, ensuring they are evenly distributed across the skillet.
- Season with salt and black pepper.
- Cover the skillet and allow the eggs to cook in the sauce for about 5-7 minutes, or until the egg whites are set and yolks (yellow) turn soft.
