These crispy, flaky vegetable puffs are the perfect blend of comfort and crunch. Filled with a mildly spiced mixed vegetable stuffing and baked to golden perfection, they make an ideal evening snack with a cup of tea or a great party appetizer. - 1 packet of Puff pastry sheets*
- 500 g Veggies of your choice, (potatoes- cut into small cubes, peas, carrot-cut into small pieces etc)
- 1 tsp. Ginger garlic paste
- 2 large Onions sliced
- ¼ tsp. Jeera | Cumin seeds
- ½ tsp. Chili powder
- ½ tsp. Coriander powder
- ¼ tsp. Turmeric powder
- ½ tsp. Red chili powder
- 2 tbsps. chopped fresh Coriander/Cilantro leaves
- 1 tbsp. Oil
- Salt to taste
- Butter for brushing

How To Make Indian Bakery Style Veg Puffs
Heat oil in a pan and sauté the onions until they turn translucent. Add cumin seeds, coriander powder, turmeric powder, and red chilli powder. Sprinkle a little water to prevent the spices from burning and stir well.
Add the potatoes and cook until they are half done. Then add the remaining vegetables and continue cooking until all the vegetables are soft and well cooked. Mix in the chopped coriander leaves and switch off the flame. Let the filling cool completely.
Meanwhile, take the puff pastry sheets out of the freezer and thaw them according to the packet instructions. Place a pastry sheet on a flat surface and add a tablespoon of the prepared vegetable filling in the center. Shape the puff as desired—rectangle, triangle, or parcel.
Brush the top with butter and bake in a preheated oven at 220°C for 15–20 minutes, or until the puffs turn golden brown. Since every oven is different, adjust the temperature and baking time accordingly.
