When fresh strawberries are in season, making mousse is a kind of ritual in my house. I am a huge fan of fruity, creamy, light and easy cold desserts. My eggless strawberry mousse calls for only 4 ingredients.
This mousse recipe easily fits under easy layered desserts in a glass category. Making mousse with fresh strawberries is bliss!
Layer the serving glass or bowl with strawberry jelly and then top it with creamy and airy strawberry mousse. You can even repeat the layers to make it look fancy.
The flavour of the mousse is like tasting fruit and cream with a hint of sweetness. This rich and creamy dessert is perfect summer dessert and also best to serve after heavy meal.
Strawberry Mousse Ingredients
Strawberries: Prefer using fresh strawberries. Hull the strawberries, cut them into four parts and puree them. Set aside. If fresh strawberries are not available, you can use strawberry jam too. Instead of strawberries you can use blueberries, blackberries and raspberries too. By following this recipe you can easily make any berry mousse.
Icing Sugar: I prefer using icing sugar in making mousse. It is easy to dissolve and gives nice texture to mousse. You can use fine refined white sugar too.
Agar-Agar: If you are looking for halal alternative for gelatin, agar agar is perfect fit. These days, agar-agar powder is easily available in the market. You can use that too.
Agar-agar is mainly used to make jelly. If you are not a fan of jelly, then layer the serving bowls with thick strawberry puree. This will add more nutrition and taste to mousse.
In India, the other name of agar-agar is China Grass. This is easily available in any grocery store. You can buy agar-agar online from amazon or big basket too.
Cream: Though heavy cream is much preferred in making mousse, you can easily make mousse with fresh cream. I prefer using Amul fresh cream. Depending on the availability. you can combine fresh and heavy cream to make mousse.
Pink Food Color: It is rare to get organic or good strawberries in South India. So, sometimes to get that blushing pink color to mousse, I add food color. Adding food color is purely optional.
Variations & Tips
Apart from strawberries, you can use mango, pineapple, kiwi, etc; and make mousse by following this same recipe.
Try adding 3-4 drops of beet juice to mousse to get natural pink color.
If using artificial pink color, try adding liquid food color. Handling powder food color is little tricky.
If whipping cream is available, then you can top the mousse with a dollop of whipping cream to make it look perfect party dessert.
Adding cream cheese to mousse, makes it creamy and delicious.
The most important tip is not to beat the mousse. Gently fold in strawberry puree into the fresh cream. Over mixing will disturb the texture of mousse.
The only trick to get light and airy mousse is not to over mix the ingredients.

Storing Strawberry Mousse
Mousse is a cold dessert. If exposed to warm climate for more than 30 minutes, it will turn runny. So, remove the mousse from the fridge, just before serving.
You can easily store leftover mousse in a clean and dry moisture free container. Stays fresh for 2-3 day upon refrigeration.

How To Hull Strawberries?
Strawberries have tough inner core. It is good to remove that before pureeing them. By hulling strawberries, you will remove the green calyx (cap of leaves) part from top and the inner core.
You can easily remove the inner core of strawberry with knife or using straw.
What Is Strawberry Mousse Made Of?
Fresh strawberries, cream and sweetener are the three main ingredients in making strawberry mousse.
Is Agar-Agar Same as Gelatin?
Agar-agar is the vegetarian version of gelatin. The main purpose of agar-agar is to thicken or create jelly like substance.

Eggless Strawberry Mousse Recipe
Eggless fresh strawberry mousse is light, creamy and easy dessert recipe. This no-bake mousse calls for only 4 ingredients. Try it today!
Ingredients
- 15 Strawberries, hulled and chopped
- 250 ml Amul fresh cream
- 3-4 tbsp. Icing sugar
- 5g. Agar-Agar (China Grass)
- Water
- Pink food color, optional
Instructions
How To Make Strawberry Mousse Recipe
- Puree strawberries with icing sugar and set aside.
- Prepare agar-agar mixture as per the instructions mentioned on the packet.
- To this add ¼ strawberry puree and a drop of pink food color.
- Mix well and pour this mixture into the desired glasses or bowls
- Tap to set the jelly mixture evenly. Cover the mouth of serving bowl or glass with cling and leave it in the refrigerator to set.
- It may take ½ -1 hour to set.
- Now whip Amul fresh cream until it holds soft peaks.
- Now gently fold in remaining strawberry puree.
- At this stage, check for sugar, if required add more icing sugar and gently fold in.
- Do not over mix the ingredients. Otherwise, cream will loose its consistency and the mousse will turn runny.
- Now pour this mixture on top of the jelly. Tap gently. Cover with cling and leave it in the fridge for 2-3 hours.
- Before serving decorate with remaining jelly or fresh strawberries.
- Add ‘love’ to make the eggless strawberry mouse taste ‘YUMMY’.
Notes
How To Serve Strawberry Mousse
Serve strawberry mousse chilled. Remove the serving glasses or bowl from the fridge, just before serving.
To garnish, you can use finely chopped fresh strawberry pieces or dollop of whipping cream or pieces of jelly or strawberry puree.
I recommend setting the mousse in individual serving glasses or bowls. By doing this it will be easy and convenient to serve.
