I love to try different brownie recipes, recipes which are simple and easy. Playing with ingredients, while baking is always fun. Eggless cocoa brownies with brown sugar, oil and whole wheat flour are the best brownies I baked till date.
Brownie – rich and fudgy decadent chocolate baked confection. Usually made with all purpose flour (maida), butter, chocolate, cocoa powder, eggs and sugar.
Over the years, brownie has evolved into many different forms. In the process, the recipe has changed through the years depending on the availability of ingredients, taste and health in mind.
Eggless Brown Sugar Brownie Ingredients
Dry Ingredients
Whole Wheat Flour | Atta – Making brownies with whole wheat flour is little tricky. Sometimes, you end up with cakey, not so moist texture. Try to use unbleached whole wheat flour. Do not use wheat flour which comes in combination with other flours like oats, chana dal, soya bean etc;
One factor which effects the texture of brownies is flour. So, use good and organic 100% whole wheat flour. I use Aashirwaad or Pillsbury brand of whole wheat flour for baking.
Brown Sugar – You can use dark brown sugar or light brown sugar. I prefer using light brown sugar powder. Why? Because, it is easy to mix and gives a wonderful light caramel taste to brownies.
Unsweetened Cocoa Powder – We are making easy brownies with cocoa powder, so using good brand of cocoa powder is must. Use only unsweetened cocoa powder for making brownies. The brown color of brownies is from cocoa powder. Apart from color cocoa powder also adds deep chocolate flavour to brownies.
Wet Ingredients
Curd – The best and most commonly used egg substitute for baking is curd. Use thick curd. To get thick curd, place the curd in a fine mesh strainer and leave for 10-15 minutes. Then discard the whey and use the curd.
Milk – Brings in moisture in the brownie batter.
Oil – Use any flavourless oil. I always prefer using sunflower oil. You can use olive oil too.
Vanilla Essence – Adds aroma and flavour.
Baking Powder & Baking Soda – These leavening agents gives the brownie rise and texture.
Chocolate – I had bar of Hershey’s chocolate lying in the fridge, so I used it. You can use any chocolate of your choice or you can skip adding chocolate pieces. Or you can use chocolate chips of your choice.
Salt – Helps in balancing all the flavours.

Who can resist warm, fudgy and chocolaty brownies? But, when we think of the brownie ingredients, we just take a step back. Now no need to step back, relish guilt-free brownies any time.
This is fuss free and easy one bowl brownie recipe. Mix all the ingredients in one bowl, pour in brownie tray, bake and relish.
Adding chocolate pieces on top of brownie is purely optional. As these eggless brown sugar brownies are lil’M’s back to school treats for her friends, I added chocolate.
Tips To Make Best Eggless Brown Sugar Brownies
Whenever you are baking, always remember to use room temperature ingredients.
If you are someone like me, who stays in a warm weather zone, then keep the ingredients required for baking on the kitchen counter 20-30 minutes before baking.
If using homemade or store brought curd, use a strainer and remove the excess water from the curd.
Instead of chocolate pieces, you can use chocolate chips. Just sieve the chips with a tbsp. of flour and sprinkle them on top of the batter.
Do not over mix the batter or over bake the brownie batter.

Ingredients
- 1 cup Whole wheat flour
- ½ cup light brown sugar
- 2 tbsp. unsweetened Cocoa powder
- ½ cup thick Curd
- 3 tbsp. Milk
- 3 tbsp. Oil
- ½ tbsp. Vanilla essence
- ½ tsp. Baking powder
- ⅛ tsp. Baking soda
- pinch of Salt
- Chocolate, for topping

How To Make Eggless Brown Sugar Brownies
Step by Step Recipe
Step 1: Line the baking pan with parchment paper or grease it with oil.
Gather all the ingredients for baking brownie and keep them on kitchen counter.
Pre-heat the oven on 180°C for 10 minutes.
Add curd to a fine mesh strainer and leave it for 15-20 minutes.
Step 2: Mixing The Ingredients
In a bowl add strained curd and to this add brown sugar powder. Combine well.
Now add milk and vanilla essence. Whisk well.
To this add oil and combine well.
Place the sieve on top of the bowl and then add whole wheat flour, cocoa powder, baking powder, baking soda and salt.
Remove the sieve and gently combine the ingredients.
Combine till there are no large flour pockets. Do not over mix the batter.
Step 3: Adding Brownie Batter To A Baking Pan
Pour the batter into a greased or parchment lined baking pan.
Spread the batter evenly.
Arrange chocolate pieces on top the batter in a pattern or sprinkle chocolate chips.
Tap on the kitchen counter to release the air bubbles.
Step 4: Baking Brownies
Place the baking pan in pre-heated oven and bake for 25 minutes on 180°C (350°F).
Insert a skewer or toothpick in the center, if it comes out with few moist crumbs, then brownies are ready.
Remove them from oven and leave the baking pan on cooling rack.
Step 5: Cutting Brownies
After 15 minutes, run sharp knife along the edges of the pan and gently tap the pan on the back.
Leave the brownie upside down on the cooling rack for 15 minutes.
After 15 minutes, gently flip and cut into pieces.
Step 6: Serving & Storing
Brownies tastes best when they are warm.
Serve these with coffee or hot chocolate.
You can pack these in snack box and brownie is my all time favorite mid-night snack.
Wrap each piece in parchment or cling film and leave in freezer. If stored in freezer correctly, they stay good for a week.
Generally, brownies are good to be eaten in a day or two.
Store brownie pieces in air tight moisture free tupperware jar or cake storage box.
Notes
Baking Pan - I used 12*10*2 inch brownie baking tray. I brushed the baking tray with oil on inside.
Suggestions for Serving Brownies
These brownies are too good, that you can gulp them without adding anything further to them.
But if you are having a party or in a mood for an elaborate dessert, then you can
serve this brownie pieces with,
custard or ice cream or whipping cream.
drizzle some chocolate or raspberry or strawberry syrup or caramel sauce.
You can even top the brownies with fresh fruits like strawberry, raspberry, blueberry, etc.

Place a piece of brownie on a dessert plate. Top it with a generous scoop of vanilla or chocolate ice cream. Drizzle hot chocolate sauce or fudge over it. You can even add caramel sauce. Top it with chocolate chips and strawberry pieces. Place vanilla or chocolate wafers and serve immedietly.
