No Cook Indian Style Chickpea Raw Mango Salad is bliss! Made with minimal, easily available pantry ingredients, this salad is perfect one bowl meal.
Chickpeas also called as garbanzo beans and kabuli chana are super rich in vitamins, minerals, fiber and plant-protein. A handful of chickpeas keep you full for long and hence, these are good for weight loss too.
Chickpeas with onion, tomato and raw mango is an extremely delicious combination. Raw mango brings sour and tangy taste in the recipe. Chopped raw mango pieces tossed with salt, lemon juice, honey and red chili powder tastes mouth-watering.
Main Ingredients To Make Chickpea Raw Mango Salad
Chickpeas – You can use canned or dried chickpeas. If using dried chickpeas, soak them in water for at least 8-10 hours or overnight. On medium flame, pressure cook for 5-6 whistles or till soft. Drain the water and use accordingly.
Onions – Finely sliced onions bring crunch in the salad. Onions enhance the taste and flavour of salad.
Tomatoes – Juicy, red and ripe tomatoes bring tart flavour in salad. I cut tomato into wedges, remove the eye and seeds before cutting into small pieces. Seeds will make salad watery, so I remove seeds from tomato while making salads and salsas.
Raw Mango – Firm, green and fresh raw mangoes cut into bite size pieces bring unique sour and tangy taste in this salad.
Red Chili Powder – Adds spice and heat to the salad. As this is an Indian styled chickpea salad, adding red chili powder is obligatory. You can use black or white pepper powder instead of red chili powder. Or you can even use red chili flakes too.
Chaat Masala – This is heart of any Indian chaat recipe. A generous sprinkle of chaat masala lifts the taste and flavour of any chaat recipe.
Salad Dressing – A quick and simple dressing of olive oil, salt, honey and lemon juice is all you need. Skip honey and add sugar or maple syrup to make it vegan.

What Else Can I Add To This Salad?
You can add boiled potatoes, grilled bell peppers, apples, pomegranate kernels, boiled sweet corn, etc.
To add more protein, you can add boiled and sliced eggs, grilled chicken pieces or shredded chicken.
To make this salad more flavoursome, you can add mayo, mustard sauce, etc.
Even you can try adding cheese like feta, paneer, etc;
Greens like spinach, kale, arugula, swiss chard, mustard greens, etc; add wonderful bite and flavour to this salad.

How do you make chickpea salad?
- Start by preparing salad dressing. Add oil, lemon juice, salt and honey (or sugar) in a jar and whisk well. Set this aside.
- In a bowl combine boiled chickpeas, chopped tomatoes, sliced onions and diced green mango.
- Drizzle the salad dressing and toss. Sprinkle red chili powder and chaat masala.
- Garnish with freshly chopped coriander and mint leaves.

- 2 cups boiled Chickpeas
- ½ cup Raw Mango pieces
- 1 Onion, sliced
- ½ tbsp. Red chili powder
- 1 Tomato, chopped
- 1 Green chili, chopped
- ½ tbsp. Red chili powder
- ½ tbsp. Chaat Masala, optional
- 1 tbsp. Olive oil
- Salt
- 2 tbsp. Lemon juice
- 2 tbsp. minced Coriander leaves
- 1 tbsp. minced Mint leaves
Instructions
How To Make Chickpea Raw Mango Salad
STEP 1: Prepare Salad Dressing
In a jar add oil, lemon juice, salt, honey and coriander leaves. Whisk until well combined. Set aside.
STEP 2: Prepare Salad
In a bowl add boiled chickpeas, sliced onion, chopped tomatoes, green chilli and diced raw mango pieces.
Mix and pour above made salad dressing.
Toss by adding red chili powder and chaat masala.
STEP 3: Garnish
Garnish with freshly minced coriander and mint leaves.
NOTE: I added one tablespoon of caramelised onion to the salad to bring little change in taste.
