Summer Days are Salad Days. Fresh fruit or vegetable salads play important role during Iftar time. As we prefer simple and easy to make food during iftar and dinner time during fasting days, salads like this always come handy. Our today’s Watermelon Cucumber Salad with colored coconut flakes is my summer and iftar special salad. This salad is refreshing and rejuvenating.
As this time, the glorious month of Ramadan falls during Summer, it is important to include fruits in your meal plan. Though I love trying out different drinks and salads during summer, fresh cut fruits have their own special charm.
Growing up my mom always made it a point to eat a fruit everyday especially during summers. Though lil’M is fussy over eating fruits, she loves it when drizzled with chocolate syrup or honey or fresh fruit juice is something she loves to drink anytime.
Cut bowl of fruits or fruit salad is always there on our iftar table during fasting days. As watermelons are plenty in this season, lets make a refreshing watermelon cucumber salad. This salad requires minimal dressing and the shredded dry coconut flakes will add nice crunch to the salad, spicy taste from pepper, sweetness from honey and tanginess from limes make this salad yum…
Watermelon Cucumber Salad
INGREDIENTS:
- 3 cups Watermelon Cubes
- ¾ cup Cucumber Cubes
- 3 tbsp. dry Coconut flakes
- 3 tbsp. Lime juice
- ¼ tbsp. ground Black pepper
- 1 tbsp. Olive oil
- 2 tbsp. Honey
- ¼ tbsp. Salt
PREPARATION:
- In a bowl mix lime juice, black pepper, olive oil, honey and salt.
- To this add watermelon and cucumber cubes and toss well. Serve by garnishing with coconut flakes.
- Add love to make this watermelon and cucumber salad taste ‘Yummy’.
