Roti Ki Kichidi, also known as Roti Ka Bharta or Roti Ki Sutriyan, is a traditional Hyderabadi recipe made using leftover rotis. It is a quick, meatless comfort dish that comes together in under 10 minutes. This easy leftover roti recipe is perfect for breakfast, lunch, or an evening snack and is a great way to turn dry rotis into a flavorful, satisfying meal with basic pantry ingredients.

For a soulfully delicious meal, I often serve this with Keema fry or Potato Fry or Chicken fry
About This Recipe
Leftover rotis are very common in Indian kitchens. Fresh rotis taste best when hot. But after a few hours, they become hard and dry. Instead of wasting them, this easy recipe helps you recycle rotis into a delicious dish.
Roti Ki Kichidi is a traditional comfort food. We call this simple and humble recipe by many names like Roti Ka Bharta, Roti Ki Bhurta, or Roti Ki Sutriyan. This dish comes from Hyderabadi home cooking.
It is simple, quick, and full of flavor.
This recipe takes less than 10 minutes to make. All ingredients are easily available at home. No soaking, or grinding masalas. Perfect for busy days.
You can enjoy this dish at any time of the day. It works as breakfast, lunch, or evening snack. Sometimes, I intentionally make two extra rotis in the morning to make sutriyan in snack or dinner.

Roti Ka Bharta | Roti Ki Sutriyan
Traditionally, Sutriyan is made with meat. Small flour dumplings are cooked in mutton or chicken gravy.
That version is rich and slow cooked. This recipe is a meatless version. Here, leftover rotis replace the dumplings. The roti pieces soak up the spices and water beautifully. The texture becomes soft, slightly coarse, and very satisfying.
This dish is a great example of zero-waste cooking. It shows how simple ingredients can create amazing flavors. It is light on the stomach but still filling.
This easy, meatless dish is my go-to recipe during Ramadan as it is quick to prepare for Suhoor (Seher) and equally perfect for Iftar.

Instructions
How To Make Roti ka Bharta | Roti ki Sutriya
- Make small pieces of roti and grind coarsely. I prefer coarsely ground.
- Add oil to a deep frying pan and add cardamom, cinnamon, clove , green chili and onions. Fry till onions turn golden brown in color.
- To this add ginger-garlic paste. Fry till raw smell wafts.
- Now add one cup of water to the oil along with salt, red chili powder, turmeric powder and ginger-garlic paste.
- When the water starts to boil add coarsely grind roti to it. As roti is already cooked, it will take less time to cook and absorb the water.

- Add 'love' to make this dish taste 'YUMMY'.
