What Is Murmura?
Murmura is puffed rice grain, processed by heating the rice kernels under high pressure in the presence of steam. It is white in color, light in weight and crispy in texture. Called by different names, murmura is a popularly used in making bhel, laddu, chivda, poha, upma, etc.
Other names of murmura are – muri, kurmura, maramaraalu or borugulu or bongu biyam (Telugu), mandakki in Kannada, puffed rice or popped rice.

Murmura Chaat is known by different names in different parts of India. Few of them are,
Churumuri -Karnataka
Jhal Muri – Kolkatta
Bhel Puri – North India
Charamburi Upkari – Udupi
Murmure Chaat – Hyderabad
Depending on the taste of locals, you will find slight difference in taste of this chaat. Recipes like this exhibit Indian culinary diversity.
Main Ingredients To Make Murmura Chaat
Murmura | Puffed Rice: Easily available in any grocery store. Puffed rice is a wholesome cereal and excellent for weight loss. This is rich in antioxidants which boosts immunity.
Onion: Finely chopped onion brings in crunchy and juicy taste in chaat.
Tomato: Finely chopped tomato adds unique taste in chaat.
Red Chili Powder: Adds spice and heat in the chaat.
Salt: Balances the flavours in the chaat.
Lemon Juice: Adds tangy taste to the chaat.
Chaat Masala: Flavours the chaat.
Coriander Leaves: Brings in aroma and freshness in chaat.
Tips & Variations
As I said, you can play around with available ingredients at home. Try adding,
- roasted peanuts
- boiled ground nuts
- fried cashew nuts
- fried and crushed curry leaves
- peeled and chopped cucumber pieces
- chopped raw mango pieces
- fried corn flakes
- boiled sweet corn
- fried chana or green peas
- roasted bengal gram
- sev or aloo bhujiya
- boiled and cubed potato pieces
You can even add red chutney, tamarind chutney and green chutney to make a spicy version of murmura chaat.
Coming to the tips,
As you can make this in no time, I suggest you to make this fresh. If made and kept, this chaat will turn soggy and will not taste good.
If making for a large group or for a party, then chop onions and tomatoes and store them in a moisture-free air tight jar. Leave this in fridge.
When chopped onion and tomato is ready, then you can make this chaat in less than 5 minutes.

- 2 cups Puffed rice
- 1 medium sized Onion, finely sliced
- 1 Tomato, de-seeded and chopped
- ½ tbsp. Chaat Masala
- ½ tbsp. Red chili powder
- Salt, as per taste
- 2-3 tbsp. fresh minced Coriander
- 2 tbsp. fresh Lime juice
Instructions
How To Make Murmura Chaat
- In a bowl add sliced onions, chopped tomatoes and red chili powder.
- To this add puffed rice and toss. Season with salt.
- Sprinkle with lemon juice and chaat masala.
- Garnish with finely chopped coriander leaves.
- Serve immediately.
- Add your ‘love’ to make murmura chaat ‘YUMMY’.

Childhood Food Memories
Since, my school days Murmura chaat is my favorite. A wooden pushcart vendor opposite to my school gate use to sell this chaat. He also use to sell candies, cut fruits like guava, pineapple, watermelon, raw mango etc. He use to sprinkle salt and red chili powder on cut fruits and they use to look droolicious, especially raw mango. Depending on the season he use to sell local berries and mango pulp roll (మామిడి తాండ్ర in Telugu & Aam Papad in Hindi) too.
Children use to call him anna (brother (bhaiya)). For making murmura chaat, he mixes up everything in a coconut shell with a wooden stick. Like a machine, his hands use to work. By stuffing the chaat in paper cone and inserting a small rectangular palm leaf, he use to serve this mouthwatering chaat.
Though I never tasted the chaat made by him but always admired how skilfully he use to make the chaat. When mom use to make this at home, sometimes we use to ask her to wrap the chaat in a paper cone. With a smile, mom use to wrap this in a paper cone. Me and my sister use to relish this as a after school treat.
Coming to the recipe, it’s simple and it’s easy. Just a few handful and easily available ingredients can turn up an perfect snack with tea or coffee.
