About Tawa Paneer Fry
There are days when I want to cook something nice for the family but don’t want to spend too much time in the kitchen. This Tawa Paneer Fry is one such recipe.
It doesn’t need an elaborate list of ingredients. In fact, most of what goes into the marinade is already sitting in my spice box—red chili powder, turmeric powder, roasted coriander powder, roasted cumin powder, ginger-garlic paste, garam masala and salt.
A couple of tablespoons of thick curd bring everything together.
Once the paneer is coated with this masala, I leave it to marinate for a little while and then shallow-fry it on a hot tawa with curry leaves. That’s it!
The curd gives the paneer a lovely tang, while the roasted coriander and cumin powders add a wonderful aroma. And those curry leaves sizzling in the oil? They make the whole kitchen smell so good.

Why I Love This Paneer Fry
I make many different paneer recipes, but this one is different because it is so fuss-free.
There is no gravy to prepare, no onion-tomato masala to cook and no long list of ingredients. Just marinate, fry and serve.
I particularly like making this when I am hosting vegetarian guests. I can marinate the paneer beforehand and cook it just before serving. That way, I have one less thing to worry about when I am putting the rest of the meal together.
And honestly, Tawa Paneer Fry with vegetable dum biryani, raita and Kaddu Ka Dalcha is one of my favourite vegetarian meal combinations. The biryani, raita, dalcha and spicy paneer is such a soul satisfying meal.

Ingredients for Tawa Paneer Fry
- Paneer – I have used 250 grams of paneer cut into medium-sized cubes. You can use homemade paneer or store-bought paneer. If you are using refrigerated paneer and it feels firm, soak it in warm water for a few minutes. Drain well and gently pat dry before marinating. This little step helps keep the paneer soft.
- Thick Curd – Use thick curd for this tawa paneer recipe. It forms the base of the marinade and helps all the spices stick nicely to the paneer. Avoid using watery curd. If your homemade curd has whey sitting on top, drain it before adding it to the marinade.
- Red Chili Powder – Red chili powder gives the paneer its lovely colour and heat. You can increase or reduce it depending on how spicy you like your food.
- Turmeric Powder – A little turmeric is enough here. It adds colour and that familiar earthy flavour.
- Roasted Coriander Powder – I prefer using roasted coriander powder in this recipe. It gives the paneer a deeper aroma and slightly nutty flavour. If you don’t have roasted coriander powder ready, simply dry roast coriander seeds and grind them once they cool.
- Roasted Cumin Powder – The same goes for cumin. Freshly roasted and ground cumin has a much better aroma than ready-made cumin powder. Together, the roasted coriander and cumin powders give this simple paneer fry recipe a lot of flavour.
- Ginger-Garlic Paste – Ginger-garlic paste adds warmth and a lovely savoury flavour to the marinade.
- Garam Masala – I add just a little garam masala towards the marinade. You don’t need much because the roasted spices are already doing most of the work.
- Curry Leaves – Don’t skip these. I love adding curry leaves to the hot oil before placing the paneer on the tawa. They crisp slightly and release their wonderful aroma into the oil.
- Oil – You only need a little oil for shallow frying the paneer. Use any neutral cooking oil you normally use.
How to Make Tawa Paneer Fry
Step 1: Marinate the Paneer
Add thick curd to a bowl along with red chili powder, turmeric powder, roasted coriander powder, roasted cumin powder, ginger-garlic paste, garam masala and salt.
Mix well. Add the paneer cubes and gently toss until every piece is coated with the marinade.
Cover and set aside for 15–20 minutes. I usually prepare the rest of the meal while the paneer is marinating.
Step 2: Heat the Tawa
Heat a tawa or heavy-bottomed pan over medium heat. Add oil and let it heat.
Add a few curry leaves and allow them to sizzle. Remove and set aside.
Step 3: Fry the Paneer
Gently place the marinated paneer pieces on the hot tawa.
Do not overcrowd the pan. If needed, fry the paneer in batches.
Cook over medium heat, turning the pieces gently so that they cook evenly on all sides.
The masala will slowly cook and begin to coat the paneer. Let the edges turn lightly golden, but do not fry the paneer for too long.
We want the outside nicely roasted while the inside remains soft.
Step 4: Serve
Once the paneer is cooked and the masala is nicely roasted, turn off the heat.
Sprinkle the fried curry leaves and serve the Tawa Paneer Fry hot.

A Few Things to Keep in Mind
Don’t Fry Paneer for Too Long
This is probably the most important thing to remember.
Paneer can turn chewy when it is overcooked. Once the masala is cooked and the edges are lightly golden, take it off the heat.
Use Thick Curd
The marinade should be thick enough to coat the paneer well. If the curd is watery, the masala will become loose and may not cling properly to the paneer.
If your curd is not thick, place it in a tea strainer and leave it to drain for 10–15 minutes. This will remove the excess whey and give you thick, creamy curd that is perfect for marinating the paneer.
Cook on Medium Heat
Don’t be tempted to turn the flame very high.
The curd and spice powders can burn quickly. Medium heat gives the paneer enough time to cook while allowing the masala to roast nicely.
Marinate the Paneer
Even 15–20 minutes makes a difference.
If I know I am going to make this for dinner, I sometimes marinate the paneer earlier and keep it covered in the refrigerator until I am ready to cook.
What to Serve with Tawa Paneer Fry
This dry paneer recipe works beautifully with rice dishes as well as Indian breads.
But my favourite combination is the one I mentioned at the beginning—vegetable dum biryani, raita and Kaddu Ka Dalcha.
The spicy paneer goes beautifully with the fragrant biryani, while the cool raita balances the spices. Kaddu Ka Dalcha adds another layer of flavour and makes the meal feel complete. You can also turn this Tawa Paneer Fry into a quick and tasty wrap. Simply place a few pieces of the paneer on a warm roti, add some sliced onion, cucumber or lettuce, drizzle with a little green chutney or yogurt sauce, and roll it up.

You can, but I wouldn’t recommend skipping the marination. Even a short 15–20 minute marination allows the curd and spices to coat the paneer properly and gives it much better flavour.

Tawa Paneer Fry Recipe
A quick and easy Tawa Paneer Fry made with paneer, thick curd, roasted spices and curry leaves. Marinated paneer is shallow-fried on a hot tawa until the masala is lightly roasted and beautifully coats each piece.
Ingredients
- 250 gms Paneer, cubed
- 2 tbsp. thick Curd
- 1 tsp. Red chili powder
- ¼ tsp. Turmeric powder
- 1 tsp. roasted Coriander powder
- ½ tsp. roasted Cumin powder
- ½ tbsp. Ginger-garlic paste
- ½ tsp. Garam masala
- Few Curry leaves
- Salt, to taste
