Since, the time Lil’M has started taking lunch box to school, paneer recipes have been my saviour. Paneer Butter Masala is always been a favourite (office/school) lunch box recipe in my house. Over the time, I tried and tested the recipe and came up with this quick, easy, creamy and delicious paneer butter masala recipe which you can pack in lunch box in no time.
Variations in making Paneer Butter Masala
You can even simplify this recipe by not frying paneer cubes and soaking them in lukewarm water for 10-15 minutes before adding them to the gravy. You can even add paneer cubes at the end of the recipe, just before adding cream or milk. Doing so, will retain the color and texture of the paneer and make it look droolsome.
If I am making this paneer butter masala for lunch box, then I add milk instead of cream. Make sure the milk is at room temperature. Sometimes I ground almonds or melon seeds and skip adding cashews.
Serving Paneer Butter Masala
Warm and creamy Paneer Butter Masala can easily be paired with roti or phulkas or naan. You can even serve this with any flavoured rice like jeera rice or tomato rice or pudina pulao or coriander rice. I sometimes stuff this in bread and make grilled sandwiches, which makes a delicious after school snack or you can even pack them in kid’s lunch box. You can even roll this in roti and add onion slices, ketchup or green chutney and make it a khatti roll.
Paneer Butter Masala
INGREDIENTS:
- 250 gms. Paneer
- 2 medium Tomatoes, chopped
- 1 Onion, sliced
- 1 tbsp. Red chilli powder
- ¼ tbsp. Turmeric powder
- ½ tbsp. roasted Coriander powder
- ¼ tbsp. roasted Cumin powder
- ½ tbsp. Garam Masala
- ½ tbsp. Ginger-Garlic Paste
- 15 Cashews, soak in lukewarm water for 15 minutes
- 1 Bay leaf
- 2 tbsp. Low fat Butter
- ½ tbsp. Kasoori Methi/Dry Fenugreek leaves
- ½ cup fresh Cream/Milk
- Salt
- 2 tbsp. Oil
- one tbsp. minced Coriander leaves
Paneer Butter Masala
Paneer Butter Masala is rich, creamy and delicious side dish made with Indian Cottage Cheese and aromatic Indian spices. Often served with roti or rice.
Ingredients
- 250 gms. Paneer
- 2 medium Tomatoes, chopped
- 1 Onion, sliced

- ½ tbsp. roasted Coriander powder
- ¼ tbsp. roasted Cumin powder

- ½ tbsp. Ginger-Garlic Paste
- 15 Cashews, soak in lukewarm water for 15 minutes

- 2 tbsp. Low fat Butter
- ½ tbsp. Kasoori Methi/Dry Fenugreek leaves

- 2 tbsp. Oil
- one tbsp. minced Coriander leaves
Instructions
How to make Paneer Butter Masala
- Rinse the paneer slab under water and cut into cubes. Tap the cubes on kitchen towel or tissue and spread them on a plate. Reserve 3-4 cubes.
- Add little butter and shallow fry the remaining paneer pieces until they turn nice golden on all sides.
- Remove on to a plate lined with kitchen towel or tissue.
- Drain water from cashews and add them to blender and blend until smooth paste.
- To this add sliced onions, reserved paneer pieces and chopped tomatoes and grind until smooth.
- In a heavy bottom vessel add oil and butter (1:1 ratio) and drop in bay leaf along with above ground cashew-onion-tomato paste.
- To this add red chili powder, turmeric powder, salt, ginger-garlic paste, roasted coriander powder and roasted cumin powder.
- Now fry on medium flame until oil starts to leave the sides of the vessel.
- Add fried paneer cubes and gently stir, until the paneer pieces are nicely coated with the masala.
- Finally add ¾ cup of water and cook cover until the gravy thickens. Once the gravy is thick (of your desired consistency) add kasuri methi and garam masala.
- Stir gently and drizzle cream or milk. Garnish with fresh minced coriander leaves.
- Serve warm with roti or naan or jeera rice or ghee rice.
