Love For Chaat
Thanks to technology and the rapidly growing street food craze, we can now easily make or order the food we crave. When I lived in Guntur, my hometown, I never had pani puri, samosa chaat, or any chaat for that matter. But now, chaat carts can be seen on every street.
My craze for chaats started in Bangalore. Thanks to Adyar Ananda Bhavan (A2B) for introducing me to the world of chaats. It became our weekend ritual to stop by AAB and relish their mouth-watering chaats.
After moving to Chennai, I began making chaat at home. Thanks to Google and my North Indian friends who generously shared their recipes, tips, and techniques for making delicious chaats. Today’s samosa chaat recipe is one of the first I learned and remains one of my most cherished recipes.
What is Samosa Chaat?
Samosa Chaat is medley of two different recipes. This chaat is made by mixing samosa and chole with spicy masalas and tangy chutneys. In a plate or serving bowl, crush potato samosa and pour chole masala. Top this with green, red and brown chutneys. Sprinkle a dash of chaat masala. Serve with finely chopped onion, minced coriander leaves and lemon juice.
Chana Samosa Chaat is completely filling and warmly satisfying chaat recipe. Though chaats are mostly snack item, I love to relish them more as a meal. Chaats like chana samosa, pav bhaji, bhel puri, etc; easily fits under dinner and lunch menu.
Indian Chaat Items For Party
Samosa Chaat Ingredients:
- Samosa: Crisp, flaky potato filled samosas are perfect for this chaat recipe. You can either make these at home or you can easily buy them from shop. Aloo filled samosa is lightly crushed and chole masala is poured over it.
- Chana: Boiled chickpeas (kabuli chana) cooked in onion and tomato gravy with minimal spices. This is our chole masala. I have shared a quick and easy method of making chana in this post. The longer, you soak chana, the tender they become on cooking. Pressure cooking chana will help in reducing the cooking time to half.
- Chutneys: Red, Green and Brown, these three chutneys are soul of most of the chaat recipes. You can either make these at home or you can easily buy them from store.
- Red chutney is fine or coarsely ground Indian condiment made with red chillies, tamarind, cumin, garlic and salt. Green Chutney is fine or coarsely ground Indian condiment made with mint leaves, coriander leaves, lemon juice, green chilies, garlic and salt. Brown Chutney | Imli Chutney is sweet and spicy thin sauce made using dates (jaggery), tamarind, red chili powder, ginger powder and salt. Combine the ingredients and cook on low flame until thick. You can easily store imli chutney in fridge. If stored in an airtight moisture free container, stays good for 10-15 days.
- Chaat Masala: This is heart of any chaat. A generous sprinkle of spicy and tangy chaat masala uplifts the taste, flavor and aroma of it. I always use Everest brand chaat masala.
- Other Ingredients: Finely sliced onion, lemon slices and chopped coriander leaves.

Samosa Chaat Recipe
Spicy and tangy samosa chaat is most famous and much-loved Indian street food. Samosa is hand crushed on a bed of chole masala. This, then is layered with different chutneys and spices. Served by garnishing with finely chopped onion, chaat masala and lemon juice. Mouth-watering, isn’t it?
Ingredients
For Chole Masala
- 1 cup Chickpeas, soaked overnight
- 2 Onions, finely sliced
- 1 Tomato, finely sliced
- ½ tbsp. Ginger-Garlic paste
- 1 tbsp. Red chili powder
- ¼ tbsp. Turmeric powder
- 1 tbsp. Garam Masala powder
- ¼ tbsp. Cumin powder
- ½ tbsp. Coriander powder
- 2 tbsp. Oil
- Salt, as required

- 4 Samosas
- 1 Onion, finely sliced
- 1 tbsp. Red Chutney
- 1 tbsp. Green Chutney
- 2 tbsp. Brown Chutney
- 2-3 Lemon wedges, for serving
- 1 tbsp. fresh minced Coriander leaves
Instructions
How to make Chana Samosa Chaat
Making Chole
- Pressure cook chickpeas until soft (not mushy). Collect the excess water and set aside.
- In a heavy bottom cooking vessel add oil and to this add sliced onions, fry till translucent.
- Now add sliced tomatoes and green chili and fry till tomatoes turn soft. Add ginger-garlic paste and sauté for 1-2 minutes till raw smell of ginger-garlic paste disappears.
- In the meantime, take 3-4 tbsp. of water in a cup and add red chili powder, turmeric powder, garam masala, coriander powder and cumin powder. Make a paste by stirring with a spoon.
- Now add this paste to above tomato mixture. Cook on low for another 2-3 minutes till everything combines well.
- Now add cooked chickpeas and add the water collected from boiled chickpeas (refer step 1).
- Using a wooden spoon, gently mash half of chickpeas, check for salt and cook for 4-5 minutes. Turn off the flame.
Assembling Samosa Chaat
- In a serving plate place samosa and gently crush it. Pour the above made chole masala all over the samosa.
- Swirl red chutney, green chutney and brown chutney as per your taste.
- Garnish with sliced onion, minced coriander leaves and lemon juice.
- Sprinkle chaat masala and Serve immediately.
- Add love to make this chana samosa chaat taste ‘yummy’.
Notes
Lubna's Serving Suggestions:
You can also add 2-3 tbsp. of fresh beaten curd along with chutneys.
If available, you can add sev too as garnish.
Adding grated carrots or chopped tomatoes will give bring color and extra crunch in the chaat.
