When I get up in the morning, breakfast is always the first thing in my mind. Being STHM, I can cook elaborate meals on weekday and keep it simple on weekends. Totally mood thing and family demands.
I love the mornings when there is idli or dosa batter ready and waiting for me in kitchen. The days when I forget to soak the lentils or when I run out of batter, these sweet scrambled eggs are my savior.
Scrambled Eggs With Sugar
The recipe of sweet scrambled eggs is one of the quick, easy and simple. I learnt to make this during my school days and now lil’M too make this sweet eggs. The most important part in this recipe is ratio of ingredients. To make light and creamy scrambled eggs you need to follow this ratio:
1 Egg + 2 tbsp. Sugar + 1 Cardamom (crushed) + 2 tbsp. Ghee (Indian Clarified Butter)
You can never go wrong with this ratio. If you are using 2 eggs then just double the rest of the ingredients and so on.

Tips To Make Light, Creamy and Fluffy Sweet Egg Scramble
Beat the eggs until nice and frothy and then add sugar.
After adding sugar, beat the eggs again until sugar is completely dissolved.
I have used cardamom powder to beat the smell of eggs. You can use vanilla essence or pinch of cinnamon powder.
Cardamom powder will not only bring taste, but also adds flavor and aroma.
If cardamom powder is not available, you can use cinnamon powder too.
Instead of ghee, you can use butter too. Ghee will give desi taste to this scrambled eggs.
Always remember to cook on low flame by continuously stirring. Scrape the edges from time to time to avoid burning of egg mixture.
Remember to use ghee or butter on room temperature. Hot ghee or butter, may start cooking the eggs, before you keep the mixture on stove.
How To Make Cardamom Powder?
Making cardamom powder is very easy. Remove the outer skin and add the seeds to mortar. Crush it using pestle. It is your choice to make it coarse or fully powdered.
Sometimes, when I have to powder one or two cardamoms, I wrap them in tissue paper and using a rolling pin or pestle I crush them. Remove the skin and then powder them finely. This is super easy way to make cardamom powder.

- 2 Eggs
- 4 tbsp. Sugar
- 4 tbsp. Ghee
- 2 Cardamom, powdered
Instructions
How to make Sweet Scrambled Eggs
- In a bowl, crack open the eggs and beat until frothy.
- Now add sugar, cardamom powder and ghee (at room temperature).
- Beat till sugar dissolves.
- Transfer this mixture to pan and cook on low flame.
- Keep stirring by scrapping the edges to avoid burning of egg mixture.
- In 3-4 minutes, the mixture will start to turn thick, stir till egg mixture is completely cooked
- Serve hot with ghee toasted bread slices or rotis.
- Add your 'love' to make this sweet scrambled eggs taste 'YUMMY'.
