Instead of using fruit juice or milk, I added curd, brown sugar, and coconut oil to make these double chocolate chip muffins extra delicious and soft.
To ensure these muffins turn out to be jumbo-sized, I used big silicone muffin liners and filled them up to the top. The result? These delightful, oversized treats that are perfect for those with a big appetite. But don’t worry if you don’t have big muffin liners. You can still use smaller ones and fill them up to around three-fourths of their capacity. This way, you’ll end up with more muffins to enjoy.
Now, it’s worth noting that microwave muffins are best enjoyed immediately. So, once you’ve whip up a batch of these scrumptious delights, make sure to relish them within 3-4 hours. Trust me, the decadent flavors of the double chocolate chip muffins, combined with the moist texture, will make every bite a truly irresistible treat.

- In another bowl, whisk together the brown sugar, melted coconut oil, egg, and vanilla essence until the mixture is smooth.
- Add the wet ingredients to the dry ingredients, alternating with the curd, and mix until just combined. Be careful not to overmix.

NOTE: I generally use silicone muffin mould for microwave baking. It is convenient and easy to bake in silicone muffin mould.

- Tap the mould gently on the kitchen counter.
