{Ramadan Special} – Guest Post: Date & Almond Overnight Oats from Faaiza of Modest Munchies
Alhamdulillah, I am grateful for this opportunity and I am excited to be a part of ‘Joy From Fasting To Feasting’. Despite a hectic routine over the past few weeks, I was pleased to accept Lubna’s offer to contribute towards this event.
Growing up in South Africa in an Indian family, Ramadan was centred around deep fried, oily and very unhealthy food which despite the amazing taste and flavours, often left me guilt ridden and very uncomfortable. When I got married 5 years ago, we decided to break from tradition and experiment with a healthier, wholesome approach to Ramadan eating. We still enjoy the deep fried savouries but keep these to a minimum and I enjoy finding and trialing healthier versions of some of our Ramadan favourites. The healthier menu also encompasses more fruits and veges, protein smoothies and a more wholesome approach to Suhoor to keep us fueled throughout the day.
One of my new breakfast favourites is ‘overnight oats’ which is made by soaking the oats overnight and requires no cooking at all. It’s sometimes called overnight oatmeal and is something my family and I have been enjoying for breakfast for sometime now. This would make for an ideal Suhoor meal as well, its wholesome, nourishing and absolutely delicious. The recipe I’m sharing today is a date and almond version. The addition of the dates and almonds add another dimension to the flavour and make it even more filling. The best thing about this recipe is that you can make it all in the bowl you’re going to serve it in.
Date & Almond Overnight Oats
(Serves 2)
INGREDIENTS:
- 1 cup Oats
- 1½ cup Milk (I prefer oat or almond, but any milk is fine)
- 4 large Medjool dates
- 2 tbsp. chopped Almonds
PREPARATION:
- Mix together your oats and almonds. Chop your dates. Throw in the dates and pour over the milk.
- Give this all a good stir and set in the fridge overnight. If you want you can put this in the microwave for a few seconds just to take the chill out.
- You can double or triple the recipe if you have a big family, make it in a big dish and everyone can dish out as they please during Suhoor.
- It’s the perfect dish for Suhoor, healthy, wholesome and nourishing.
