{Ramadan Special} – Cucumber Mint Cooler by Suhaina of ‘My Singapore Kitchen’

It made me super excited and happy when Lubna of Yummy Food asked me for a Ramadan recipe for her event “Joy From Fasting to Feasting- VIII”.While I don’t really like the idea of feasting during Ramadan, it is a period when even the simplest of food appears to be yummy. The 13-14 hours of fasting reminds us how fortunate we are to have at least three full meals during the rest of the year.

Ramadan is also a period when I find myself extremely busy with religious activities and household chores. But regardless of the busy schedule I also make it a point to make a special dish for my family. It may not be too fanciful or outlandish, but it will be something worth waiting for. My family also prefers to have less of fried food during Ramadan and we try to have more of baked, healthy food.
When I think of Iftar, the first item that comes to my mind is the drink. With Summers in full swing and our body had been deprived of water the whole day during fasting, the body need instant hydration and nourishment. This is a very simple drink with minimum ingredients which really does magic. This drink is light, healthy and rejuvenating and this drink suffices all these qualities.
Cucumber Mint Cooler
INGREDIENTS:
(Makes 3-4 glasses)
- Salad Cucumber – 1
- Sugar – 3-4 tbsp
- Mint leaves – 8-10
- Lemon – 1 ( 3-4 tbsp)
- Himalayan Rock salt – 1 pinch
- Ice cubes- to serve
- Water – 3 cups
- Lemon rings and mint leaves for garnishing
PREPARATION:
- In a blender, puree the cucumber,1 cup water, mint, salt and sugar. Pour the puree through a fine mesh strainer into a bowl. Use the spoon to press the solids to take out all the juice.
- Add the remaining water, lime juice and mix it well.
- Fill the glasses. Add in Ice cubes.
- Garnish with lemon and mint leaves and a slice of cucumber.
- Cucumber cooler is ready to be served. Enjoy!
