About This Recipe
Some days stay etched in your memory forever. Today is one of those days for me.
Today, Lil’M appeared for her very first exam at school. On my way back after dropping her off, I found myself wondering how quickly time has passed. It feels like only yesterday that I held her in my arms for the first time, and now she is sitting in a classroom, writing her first exam. It is a new phase of her life and mine too. Allhumdulliah, while she seems to be enjoying every bit of it, I am still trying to catch up with how fast she is growing.
One of the biggest changes that came with school was packing her lunch box every morning. Like most mothers, I am always looking for recipes that will make her finish her lunch and come home proudly showing off the little star her teacher gives to children who empty their lunch boxes. Those stars may be small, but they mean the world to young children.
Bread-based snacks have always been Lil’M’s favourite, but coming up with new and exciting ideas isn’t always easy. So I often experiment with different ingredients to create something simple, delicious, and lunch-box friendly.
That’s how these Cheesy Sweetcorn Grilled Sandwiches became a regular in our home. Sweet corn, fresh vegetables, and plenty of melted cheese tucked between slices of bread and grilled until golden and crisp make a combination that Lil’M happily eats without any fuss. They are quick to prepare, easy to pack, and always come back as an empty lunch box.
Whether for breakfast, an after-school snack, or a lunch box treat, these cheesy sweetcorn sandwiches are always a winner.
