- ½ lit. Milk
- ½ cup Sugar
- 2 tbsp. Ghee | Clarified butter
- ¼ tbsp. Cardamom powder
- few strands Saffron or orange Food color
- 12-15 Cashews, roughly chopped
Instructions
How To Make Anday Ka Halwa At Home
- Begin by boiling the milk, then set it aside to cool.
- In the meantime, add 1 tbsp. of ghee to a pan and fry roughly chopped cashews till they turn nice golden. Remove and set aside for garnish.
- In a bowl, beat the eggs until they become foamy.
- Take 1 tbsp, of lukewarm milk and soak the saffron strands in it for a rich aroma and golden hue. If using food color, then skip this step.
- Heat a heavy-bottomed pan or vessel and add the beaten eggs, cooled milk, ghee, and cardamom powder. Mix everything well.
- Cook the mixture on low flame, stirring continuously, until the water separates from the milk.
- Add the sugar and soaked saffron strands to the mixture (if using food color, add it now), then continue cooking until all the water evaporates.
- The pudding should reach a thick, halwa-like consistency and start sticking to the spoon.
- Turn off the flame and add few fried cashew nuts.
- Serve the halwa warm by garnishing with with fried cashews for a delightful crunch.
