Baby corn is yet another vegetable, which lil’M eats without any fuss. I too love trying out something new with these baby corns. So, its win-win situation whenever I make Baby Corn at home.
Tips when you are making a new recipe
Whenever I try any new recipe, I completely follow the procedure mentioned to avoid any recipe disaster. If I am going to make that recipe again then only I will make my own changes in the recipe.
I suggest you to read the recipe 1-2 times completely before going to make it.
I saw this recipe on Prathibha’s blog and simply followed the steps mentioned by her in the recipe. This baby corn masala gravy has become a regular side dish in our house these days.
Main ingredients needed to make capsicum baby corn masala recipe are,
Baby Corn – You can either steam or boil baby corn before adding them to curry.
Capsicum – I used green capsicum. You can use red and yellow too. You can even use combo of all three (yellow, green and red).
Cashew nuts – I used roasted cashew nuts paste. You can skip this to make nut-free version. For low-fat version, you can use melon seeds instead of cashew nuts.
Garam masala – I used Homemade Garam Masala powder. This is gently spiced curry recipe. All you need is the powder of cardamom, clove and cinnamon in 1:2:1 ratio. Check my easy to make everyday garam masala powder recipe to know more.
Amchur powder – Dry Mango Powder (Amchur powder) will bring nice tangy taste in the curry without adding additional moisture.
Cream – I used Amul Fresh Cream for giving creamy texture to the gravy. You can use thick coconut milk, to make this vegan. Instead of cream, you use skimmed milk to make low-fat version of this recipe. Skip adding milk, if you are using coconut milk.

In this recipe, crunchy baby corn and crisp capsicum are cooked in rich, creamy and spicy onion-tomato masala gravy. A perfect vegetarian gravy based side dish recipe to go with any Indian bread or flavoured rice.

Capsicum Baby Corn Masala
Easy Capsicum Baby Corn Masala Gravy is aromatic and delicious curry made by steaming baby corns and cooking them in spicy capsicum gravy.
Ingredients
- 15 Baby corn, cut length wise
- 1 big green Capsicum, diced
- 1 Onions, sliced
- 2 Tomatoes, deseeded and chopped
- 8 Cashew nuts
- ½ tbsp. Ginger-Garlic paste
- 1 tsp. Red chili powder
- 1 tsp. roasted Coriander powder
- ½ tsp. Garam masala
- ½ tsp. roasted Cumin | Jeera powder
- ¼ tbsp. Turmeric
- ½ tsp. Amchur powder
- ½ tsp. Cumin
- ¼ cup Cream, optional {Skip it to make Vegan}
- 2-3 fresh springs of Coriander leaves, minced
- Salt
- Oil
Instructions
How to make Capsicum Baby Corn Masala Gravy
- Add oil to a pan and fry sliced onions until they turn translucent.
- Now add ginger-garlic paste, chopped tomatoes, red chili powder, turmeric powder and salt.
- Fry for a minute and add chopped tomatoes. Cook till tomatoes turn soft. Add cashew nuts and turn off the flame.
- Leave this to cool completely and then grind to make smooth paste. Set this aside.
- In the same pan, add 1 tbsp. oil and fry sliced baby corn and cubed capsicum. Alternatively, you can steam or boil and add baby corn and capsicum.
- Fry till they are semi cooked. This will take 6-8 minutes. Take out and set aside.
- Now add cumin and fry till it flutters ,then add above ground paste.
- Stir and add roasted coriander powder, roasted cumin powder, garam masala and amchur powder.
- Fry on low flame by stirring until oil starts to leave the sides.
- Now add semi cooked capsicum and baby corn pieces and using spoon gently coat the masalas to the pieces.
- Add half cup of water and cook covered for 8-10 minutes or till baby corn turns soft.
- Add cream and give a gentle mix to the curry. Garnish with minced coriander leaves and serve hot with roti or rice.
- Add love to make this Capsicum Baby Corn Masala Curry to taste ‘YUMMY’.
