Ingredients To Make Microwave Carrot Cake
- Carrots: I used seasons best pink carrots in making this cake. You can use normal carrots too.
- Flour: For cake batter, I combined all-purpose flour (maida) and oats flour in 2:1 ratio. You can skip oats flour completely.
- Cinnamon Powder: When paired together carrots and cinnamon are perfect match. Cinnamon powder brings delectable aroma and flavour in the cake.
- Baking Powder and Baking Soda: As we are making cake in microwave, baking powder and soda will help in raising the cake batter perfectly.
- Icing Sugar: I prefer using icing sugar in microwave cakes as it gets mixed easily in batter.
- Butter: Helps in making the cake moist and giving a soft texture.
- Milk: Milk helps in combining all the ingredients and makes the cake soft. Cream Cheese: I have used Britannia Cream Cheese for frosting. If cream cheese is not available, you can frost the cake with whipped cream too. Even plain carrot cake tastes yum.
Tips and Variations in Making The Best Microwave Carrot Cake
- I love pink carrots. These are naturally sweet and bring nice taste in the cake. You can choose regular carrots too.
- Brown sugar or granulated sugar or powdered sugar can also be used in making this carrot cake.
- If using granulated white or brown sugar, then mix the sugar in milk till it is completely dissolved. Otherwise, sugar will not melt in batter and the cake will not be evenly sweet.
- Olive oil or ghee can also be used instead of butter.
- Instead of all-purpose flour, you can use wheat flour or any gluten-free flour like almond flour.
- You can replace milk with buttermilk.
- I have used colored coconut flakes as topping on cake. You can use roughly chopped pecans, walnuts, etc;
Storing Microwave Cakes
Always remember, microwave cakes are for immediate consumption. Cakes or muffins made in microwave stay good for 5-6 hours.
Do not store microwave cakes for long time. Try to make in required quantity and serve once they reach room temperature.

- 1 cup all-purpose Flour
- ½ cup peeled and fine grated Carrots
- 3 tbsp. Oats powder
- ¾ cup Icing sugar
- ¼ tbsp. Baking powder
- pinch Baking soda
- pinch of Salt
- ½ tbsp. Cinnamon powder
- ½ cup unsalted Butter, at room temperature
- 1 tbsp. Vanilla essence
- ½ cup Milk, at room temperature
- Colored Coconut Flakes, optional

- ½ cup Cream cheese, at room temperature
- 2 tbsp. unsweetened Cocoa powder
- ½ cup unsalted Butter, at room temperature
- 1 tbsp. Vanilla essence
- ¾ cup Icing sugar
Instructions
How To Make Eggless Carrot Cake From Scratch
Dry Ingredients:·
- Sieve and combine flour, oats powder, icing sugar, baking powder, baking soda, cinnamon powder and salt. These are our dry ingredients.
Wet Ingredients:-
- In another bowl combine butter, milk and vanilla essence.
- Now gently fold in dry ingredients by adding spoon by spoon until everything combines well.
- Add in grated carrots and mix.·
- Grease microwave safe bowl and pour in the above batter. Tap gently to spread evenly.
- Microwave this for 4-5 minutes. When touched with your finger, the centre of the cake should spring back.
- Remove from microwave and leave to cool for 5-6 minutes.
- Carefully remove on to cooling rack and leave it to cool completely.
How To Make Chocolate Cream Cheese Frosting
- Swift cocoa powder and icing sugar and set aside.
- Add cream cheese and butter to a bowl and beat until creamy.
- Slowly add in sifted cocoa powder and icing sugar mixture. Beat until well combined.
- Add in vanilla essence and beat until smooth and shiny.
- Spread this over the microwave carrot cake.
- Top it with colored dry coconut flakes and serve.
