Tender Coconut Pudding Recipe
Tender coconut pudding is a delightful dessert that's light, creamy, and bursting with the refreshing flavor of tender coconut. Coconut pudding adds a touch of tropical elegance to your iftar table, offering a refreshing and satisfying end to the day's fast.
Ingredients
- 10g China Grass, cut into thin pieces
- 1 tin Condensed Milk
- 1 cup Milk
- 3 cups Coconut Water
- 1 cup Tender coconut flesh
- 4 tbsp. Sugar
Instructions
How To Make Tender Coconut Pudding
- Mix 10 grams of China grass with 1½ cups ( 375 ml) tender coconut water and keep aside for an hour.
- In a mixer jar, add tender coconut flesh and ½ cup of tender coconut water and pulse till smooth.
- NOTE: If there is no enough coconut flesh, you can mix 3 tbsp. of coconut milk powder with ½ cup of coconut water)
- After one hour, in a thick bottom pan, heat the China grass and coconut water.
- Stir till the China grass is completely dissolved. Turn off the flame. Leave this cool.
- In another thick bottom pan, heat condensed milk with milk, coconut water and sugar. Turn off the flame, as soon as the mixture gets warm. Do not let it boil.
- Mix the coconut flesh puree (from step2) to the condensed milk mixture.
- To this add the melted China grass and strain this mixture.
- Using hand blender, whisk the mixture for 10 seconds. This will help in evenly combining the mixture.
- Pour into a pudding dish or serving bowls and refrigerate for 4-5 hrs.
- Garnish with praline powder or pomegranate seeds and serve.
