Cool breeze, cloudy sky and light drizzle is the scene outside my window….This scene is making me so dull and lazy…that I feel to tuck in bed…wrapping warm blanket and sipping hot chocolate while flipping through the pages of my favourite food magazine…..When I was getting ready to settle down with this scene….my phone beeped leaving a message from a dear friend which says…” I am near your house doing some shopping and planning to drop by. R u home?” I replied her ‘s’…come down’ and started thinking what to serve her on a rainy evening along with Coffee…..as she is huge fan of savoury goodies…
Upon thinking for few minutes I remembered that I have an Microwave Desi Khana recipe book by Tarla Dalal which I ordered from Flipkart days back….Flipping through the pages, I found Microwave Khaman Dhokla….which is easy to make and all the ingredients are readily available in my pantry….With out wasting a single minute, I jumped out of my bed and putting on my slippers rushed into the kitchen to try my hands on this delectable dhokla….As this is my first attempt to make this golden beauty…I was little scared too…but to my surprise the dhokla came out very spongy and yum. For me they are perfect balance of heat coming from green chilli, sour from citric acid crystals and sweet from sugar….whole and whole an mouth watering simple recipe…..
As you already know, I am huge fan of microwave cooking and I love experimenting a lot in microwave….According to me, this is one of the super quick recipe which I made in microwave…..This is my first attempt at making an savoury item in microwave and love making it….If you are in rush to make anything savoury or if you are getting that urge to make this dhokla by seeing the pictures…then do try it….I swear you gonna love it….. So I leave you with the recipe….as my sweet friend is going to be here in any moment…..Let me and her enjoy these delectable dhoklas with steaming hot cup of chocolate flavoured coffee….watching the rain through the window….and chit chatting about everything in the world……
INGREDIENTS:
- 1½ cup Besan/Bengal gram flour
- 2 tbsp. Semolina
- 2 tbsp. Sugar
- 1½ tbsp. Ginger-Green chilli paste
- ½ tsp. Citric acid crystals
- 1 tbsp. Fruit salt
- 1 tbsp. Red chilli flakes
- 1 tbsp. minced Coriander
- Salt
TEMPERING/TADKA:
- ½ tsp. Mustard seeds
- 1 tsp. Sesame seeds
- 1 tbsp. chopped Green chillies
- 5-6 fresh Curry Leaves
- pinch of Asafoetida
- Oil
PREPARATION:
- Grease microwave safe bowl with oil and set aside.
- In a bowl combine besan, semolina, sugar, ginger-green chilli paste, citric acid crystals and salt. Mix all together and add 1-1½ cups of water. Whisk all the ingredients until everything combines well.
- Now add fruit salt on top of the above mixture and sprinkle some water. Mix the batter gently and leave for 1 minute.
- Pour this batter into the greased microwave safe bowl and cover with plastic wrap. Tap around to level the batter and microwave for 2 minutes or until the toothpick comes out clean.
- Leave it in microwave for another 1 minute and take out and rest it to cool before cutting down into desired shapes.
- Meanwhile make tempering by heating oil in a kadai or heavy bottom cooking vessel and pour in mustard seeds, sesame seeds, chopped green chillies and curry leaves. When the curry leaves start to change color, add asafoetida and turn off the flame. Add 1 tbsp. of water to this tempering and pour on microwaved dhoklas.
- Garnish with minced coriander and red chilli flakes. Serve warm with tomato sauce or green chutney.
- Last but not least add your ‘love’ to make the dish ‘YUMMY’.
NOTES:
- As the batter raise in size upon microwaving, it is always recommendable to pour the batter to the half of the mould to avoid overflow.
- You can even use cookie cutter to cut into desired shapes.
- I used and did it in two batches.
- You can even substitute citric acid crystals with 1 tbsp. of lemon juice.
- Make sure citric acid crystals and sugar are completed dissolved in the batter.
- I used Borosil Rectangular Dish of 240 x 145 x 35 mm.
