Main rang sharbaton ka,
Tu meethe ghaat ka paani…
Mujhe khud mein ghol de toh,
Mere yaar baat ban jaani…
Wondering what happened to me….Nothing curious or serious…it is just the weather outside….it’s 45 C since two days and it will soar as the days pass by. Hot air, power cuts and deserted roads….that’s what summers are here in my native. In a situation like this, even a simple word sherbet | sharbat can be very refreshing….isn’t it ???? Same is the case with me…I was surfing channels in the afternoon and heard this song….since then I am humming this….
The word sherbet was something which kept echoing in my mind…so thought of making a chilled drink to pamper my senses….Though these days Roohafza, lemonade and lassi are quite frequent at my home…I want to try something new and refreshing and remembered my mom was talking about her childhood favourite summer dink…..Aab Shola.
What is Aab Shola?
Aab Shola – Hyderabadi Summer Drink
- 2 Raw Mangoes
- 1 cup Sugar
- 1 tbsp. Black salt
- ½ tbsp. roasted Cumin powder
- ¼ tbsp. Black Pepper powder
How to make Aab Shola:
PREPARATION:
- Add raw mangoes to pressure cooker with enough water. Pressure cook for 2-3 whistles or until soft. Alternatively you can use stainless steel pot with enough water.
- Bring water to boil and add raw mangoes. Cook till mango turns soft. Let the steam settle down. Remove the lid, strain and leave it to cool.
- Once cool enough to handle, peel off the skin gently and squeeze the pulp out using your fingers.
- Now add this pulp to mixer jar along with sugar. Grind to smooth paste.
- Whisk in black salt, cumin powder and black pepper. Pour the concentrate in air tight plastic or glass container and leave it in fridge to chill.
- Add love to make this drink taste ‘Yummy’.
How to Serve Aab Shola:
- Fill the desired glasses with ice cubes and pour in 3-4 tbsp. of above made concentrate. Add chilled water, stir and serve immediately.
- Adjust sugar according to your taste. If the mangoes are sour you need more sugar.
MOM’S TIP:
How to store mangoes?
- Soaking the mangoes raw or ripe in water for 3-4 hours or overnight in water, removes dirt and greasy layer from mango skin.
- It is also said that soaking mangoes overnight will reduce heat in them.
- Wipe clean with kitchen towel or tissue before eating, using or refrigerating.
