Back home, Ramadan is a huge celebration at both my parents and in-laws place. It is always a blessing to stay and celebrate the festivals and occasions with family and friends. I look forward to it every year. Most of my fasting days at mom’s place went by attending college and work. I was so busy with studies and work that I hardly paid any attention to the food served in Seher or Iftar at that time. But after marriage being the eldest daughter in law in a big family…I got to learn more about planning, cooking and serving the food during Ramadan. I am very glad to say that my mom in law, is not only a very good cook, but also is very good at planning. It is from her, I learnt to make many recipes and planning to curate a menu which serves both Iftar and Seher food needs. As Ramadan is a time for more Ibaadat, planning a menu ahead and making some make ahead recipes, spice powders and pastes will ease your work. At both my mom’s and mom-in-laws place, Friday’s Iftar dinner is special and is always made in abundant to send to orphanage or poor people and Sundays are Iftar Party days…and this continuous till Ramadan ends. Biryani/Pulao is always a star main course recipe in any celebration or festival at my house. Though they are many other recipes which we cook, biryani is most loved by all. They are different biryani or pulao recipes which we make depending on time, occasion and number of people. Listing below are some of the much loved biryani recipes from my blog and friends.
Mutton Biryani – No festival or celebration is complete in my house without cooking this lavish Mutton Biryani. Andhra style Biryani doesn’t carry many spices like shajeera, nutmeg, Bayleaf, maze, etc., only spices used in the recipe are cardamom, cinnamon and cloves. The heat in the recipe comes from the spicy green chillies.
Hyderabadi Kachche Murgh ki Dum Biryani – This is indeed little easy method of making biryani, where the marinated chicken is layered with semi cooked rice, garam masala and saffron milk.
Chicken Tahari – Tahari has got ingredients of biryani and procedure of pulao. This one pot meal is bliss during fasting days.
Yakhni Pulao Shahjahani – A delectable and aromatic pulao from the kitchen’s of Mughal’s. This is one incredible one pot meal.
Prawns Biryani – Prawns need less time to marinade and cooking, so I feel prawn biryani recipe to one of the simple among other types of non-veg biryani recipes. Do give it a try…
Egg Dum Biryani – No time to cook fancy and elaborate meal….?? Then try this simple and quick Egg Dum Biryani. This is my very favorite one pot meal.
Safed Murgh Biryani – This biryani is made by Afroz of World Cafe For U for Ramadan Event, Joy From Fasting To Feasting -X. This biryani recipe is not masaledar like our other traditional Biryani’s but nice and delicate with full of flavor.
Chicken Kabsa – We are in love with this Chicken Kabsa by Rubina of All Floured up. From the time, she sent me this recipe to be part of Joy From Fasting To Feasting -IX, I have been making it often. Fluffy spice-infused rice onto a large platter, topping it with shredded meat, chopped cilantro leaves, and fried raisins and sliced almonds. Bliss!!
Persian Lubia Polo – This wonderful flavoured Persian Lubia Polo by Roxana of The Delicious Crescent, is much similar to our Indian ‘Kheema Biryani’. Do try this soon.
Kofta Biryani – My mom makes a droolicious ‘kofta biryani’ that I bet you will not stop licking your fingers….Soft and spicy meat balls are deep fried and cooked in rich and creamy yogurt gravy and then added to flavored rice with lots of masala and spices…..a one pot meal in itself.
Egg Potato Biryani – This incredibly delicious biryani is made by Aish of ‘Spices in the Cookie Jar‘. This is very simple, easy and flavoursome biryani recipe.
Chicken Dum Biryani – Biryani is a art and it takes time to master this art. Chicken Dum Biryani Recipe is one of my very first learnt recipes and till date it is one of my favourite. A complete meal in itself, Chicken Dum Biryani always win hearts whenever I make it. Do try this flavour-rich and super delicious biryani.
