Awww….come on tell me who can resist the aroma of freshly ground and brewed coffee on a chilly winter day and when the coffee is flavoured with best chocolate of the world….isn’t it tempting to just read….Yeah, these days my taste buds are in love with this delicious Hot Chocolate Cashew Coffee. My love for coffee started, when I was doing computer course in Aptech…at that time we had a retail coffee shop near the bike parking and the aroma that fills the air when the coffee is pounded is still fresh in my mind and let me tell you it is one of my fondest memories till date.
Though I don’t drink coffee regularly…I do make a cup when I am in a mood to soothe my senses luxuriously, which I call it my #metime. My coffee preferences change depending on mood. I like strong coffee, sometimes I go with instant coffee too, but I love chocolate flavoured coffee the most. My today’s recipe Hot Chocolate Cashew Coffee is my new addition to the list of my favourite coffees. Come indulge in the hot, rich, creamy, frothy, vegan and aromatic flavour of nut milk coffee.
Why Cashew Milk??
Wondering why I used Cashew Milk…?? Hmm…the total credit goes to the bloggers who have been contributing their wonderful recipes as a part of menu plan for my event weekly menu planner. Going through these recipes, gave me the idea of veganising my hot chocolate coffee. As I have already tried almond milk hot chocolate, I thought of giving my hot chocolate coffee a delicious and nutty twist with the taste of cashews. As we all know cashews are high in calories, heart-friendly and packed with soluble dietary fiber, minerals and vitamins. Did you guys also know that you can brew hot chocolate with a Keurig? I discovered this the other day, and I didn’t actually know this.
Today while I was sipping this wonderful hot chocolate cashew coffee, with soothing jazz playing on my laptop…I was thinking of New Year…In my family where I grew and where I am married into, there is no hype given to New Years. New Year is just another day…the only thing that change is calendar…rest goes routine. Talking about routine….few days back my friend called up and she asked me…what’s going on?? I said simply routine. You know what she said… Allhumdulliah …Life going on in a routine is big blessing. True, indeed right…??
In the days, you don’t know what is going to happen the other minute….living up every day healthy, hearty and happy is a challenge. I never wait for new years to make a resolution and never restrict myself to try or do something new in and around at new years’ time only…..I don’t wait for the right time, to do what my heart craves. Hot Chocolate Cashew Coffee
INGREDIENTS:
- 2 cups Cashew Milk, check NOTES
- 1 small bar Chocolate, I used Fabelle with 84% Cacao from Ghana
- 2 tbsp. Drinking Chocolate
- 1½ cup Coffee decoction
- 1 cup Water
- 2 tbsp. Honey, optional
How To Make Hot Chocolate Cashew Coffee
PREPARATION:
- Melt chocolate bar in microwave safe bowl.
- Bring water to boil and add drinking chocolate to it. Whisk and stir until it starts to thicken. Turn off the flame and add cashew milk along with coffee decoction, melted chocolate and honey. Whisk well and serve immediately.
- You can even top with coloured sprinklers or melted chocolate or non-dairy whipped cream or marshmallows.
- Add love to make this drink taste ‘Yummy’.
How to make Cashew Milk
Soak unsalted cashew nuts in water overnight or for 5-6 hours or if you are in hurry, soak cashews in hot (not boiling) water for 15 minutes. Drain and rinse thoroughly, discard the water in which the cashew nuts are soaked. Now add cashew nuts to a blender and blend until smooth and frothy by adding little water at a time.

I’m mad because I’m at work and I can’t try this immediately! It is really cold, damp, and rainy these past few days and I would love nothing more than to curl up on the couch with a book and a steaming mug of this. I usually drink almond milk lattes, so cashews would be a great addition to my line up. Thanks!
