How To Make Hyderabadi Dum ke Roat (Healthy Version)
In a small bowl, soak the saffron threads in lukewarm milk. Let it sit for a few minutes to release its color and flavor.
In a large mixing bowl, combine the whole wheat flour, semolina, baking soda, and cardamom powder. Mix well to ensure all dry ingredients are evenly distributed.
Add the room temperature ghee to the dry mixture. Using your hands mix thoroughly until the ghee is well incorporated and the mixture resembles coarse crumbs.
When you take the flour and close it in your fist, it should hold shape without breaking.
Now slowly add the saffron-infused milk and mix well to form a sticky dough.
Cover and leave this dough for at least 30-40 minutes.
