I have got a cute little picky eater at home who troubles me with eating fruits. Me, being mamma always on look for innovative, interesting and delicious new ways to impart fruits in my Lil’M’s daily diet. Though she likes fruit shakes, fruit flavoured muffins, cupcakes, cakes, juices etc., she gets bored soon. Variety is spice of life, isn’t it?
So, in this quest to try out something new for my lil’M, I came up with this simple compote recipe. I made pineapple compote before and everyone at home loved it. So this time I thought making apple compote as I have got season’s best organic apples for an attractive price.

Ingredients
- 2 Apples, cored, peeled and diced
- 1 2’inch Cinnamon stick
- 2 tbsp. Sugar
- 100 ml Water
- 1 tbsp. Vanilla extract
- 2 tbsp. Apple Flavoured Muesli, optional
Instructions
How to make spiced apple compote
In a heavy bottom cooking vessel add diced apples along with cinnamon stick, sugar, vanilla extract and water.
Cook on low for 15-20 minutes or until apples turn soft (not mushy).
Stir in between. If the compote is too runny, then cook till you get thick texture.
Serve lukewarm with crunchy apple flavoured muesli.

- You can serve apple compote chilled with yogurt as parfait.

The idea of such an aromatic dish to entice your little one, is superb. Muesli with it is a great sack idea. I am thinking I'll make this compote, line it with other ingredients like muesli, popped amaranth, curd etc. and make a lovely parfait out of it.
