What is Turai and what is its English name?
Turai is one of the most loved and widely used Indian vegetable. Green colored, slender with ridges, medium to long in size and shape. Turai has spongy flesh with white pulp and seeds.
Skin of turai is hard and so we peel it off before cooking. We make a spicy and delicious chutney with the turai peels.
Turai or Torai is called Ridge Gourd in English. We call this Beerakaya (బీరకాయ) in Telugu and Peerkangai in Tamil. Other names of Ridge Gourd include angled luffa, Chinese okra, dish cloth gourd, ridged gourd, sponge gourd, vegetable gourd, strainer vine, ribbed loofah, silky gourd, silk gourd, and sinkwa towel sponge.

Ridge Gourd comes with many health benefits. This vegetable is high in water content and is good source of dietary fibre.
Include this in your summer meal plan to keep yourself hydrated. Apart from this turai is also good for vision, anemia, weight loss, constipation, etc.
Turai is mostly given to women who are recovering from C-section delivery. Ridge gourd helps in healing the wound faster.
Turai Masoor Ki Dal
This recipe of turai masoor dal is always special to me. Since the time, I was kid this combination of turai and masoor dal has been my favorite side dish recipe to go with rotis.
Recipe of turai aur masoor ki dal is a combo of fresh ridge gourd and split red lentils (masoor dal). Masoor dal is quick cooking dal and whereas turai is slow cooking. Hence, when these two come together, the medley is delicious and flavorsome.
Turai Masoor Dal Recipe Ingredients
Turai | Ridge Gourd – Scape the ridges and peel the skin. Wash thoroughly and cut into small pieces. Always remember to wash turai before cutting it down into small pieces. As this is a water based vegetable, if you wash after cutting, it will take long time to cook.
Masoor Dal | Split Red Lentils – As these are fast cooking lentils, you do not need to soak them or boil them before.
Onion – Peel the skin and chop the onions finely.
Green Chilies & Red Chili Powder – Green chilies bring heat in the recipe, whereas red chili powder adds spice and color to the recipe.

Turai aur Masoor ki dal is simple, easy to make and healthy Indian dal recipe. In this recipe, finely chopped ridge gourd pieces are cooked along with split red lentils. Turai masoor dal is wholesome, nutritious, vegan and gluten-free plant based recipe. This is often served with rotis.
Ingredients
- 1 kg Turai, peeled and cut into pieces
- ½ cup Masoor dal, washed
- ½ tbsp. Ginger-Garlic paste
- 1 Onion, finely chopped
- 2 Green chilies, slight lengthwise and deseeded
- 1 tbsp. Red Chili powder
- ¼ tbsp. Turmeric powder
- Salt, as per taste
- 2 tbsp. Oil
- 1-2 spring fresh Coriander leaves
Instructions
How to make Turai Masoor Dal Recipe
- In a pan heat oil and fry sliced onions and chopped green chilies until onions turn translucent.
- To this add ginger-garlic paste and fry for a minute (until raw smell wafts)
- Now add turai pieces, masoor dal, red chili powder and turmeric powder.
- Give the ingredients a gentle stir until well combined. Cook on medium flame for 1 minute and add ½ cup of water.
- Reduce the flame, cover with a lid and cook on a low flame till dal is completely cooked.
- Now add salt and garnish with fresh coriander leaves (if using).
- Serve this turai dal sabzi with hot piping roti’s.
- Add 'love' to make this turai masoor dal taste 'YUMMY'.
How to make Turai Masoor Dal in Pressure Cooker
- Add oil to pressure cooker. To this add sliced onions and chopped green chillies.
- Fry till onions turn transparent. Now add ginger-garlic paste and fry till raw smell wafts.
- To this add ridge gourd pieces (turai), split lentils (masoor dal) red chili powder and turmeric powder.
- Fry for a minute and add ½ cup of water. Stir and close the cooker.
- Pressure cook for 2 whistles. Wait till pressure settles. Open the lid and add salt.
- Adjust the consistency accordingly. Serve warm with chapathis.
Notes
Tip by Lubna:
Always remember to add salt in the last for any dal based recipe. Doing so will cook the dal in less time.
