Atayef,” or “Katayef” as it’s known in Egypt, holds a special place in our hearts, especially during Ramadan after Iftaar. It’s a beloved dessert that my family and I eagerly anticipate each year. For me, Ramadan means fasting, praying, and indulging in the joy of “Atayef”!
Making “Atayef” at home during Ramadan brings back cherished childhood memories. I remember the anticipation of toasting nuts, their delightful aroma filling the kitchen while we fasted and eagerly awaited the evening meal. Crushing the nuts in a plastic bag or food processor was always a highlight, adding to the excitement of preparing this special treat.
The process of preparing the sugar syrup, infused with the comforting scent of vanilla, also fills me with nostalgia. It’s a ritual that brings a smile to my face every time I recreate it.
Traditionally, we fill “Atayef” with a mixture of toasted nuts, though some prefer cream cheese or cream for a different twist. After filling them, we carefully fold and seal each pancake, storing half in the fridge to fry fresh the next day. This ensures they’re always crispy and delicious when we enjoy them.

Fried Qatayef: Egyptian Filled Pancakes
Fried Qatayef, are cherished dessert in Egyptian cuisine. These are filled pancakes that offer a delightful blend of soft texture and sweet, nutty flavors. These semicircular pastries are traditionally enjoyed during festive occasions, especially Ramadan, symbolizing joy and togetherness.
The process involves frying the pancakes until golden brown, then soaking them briefly in sugar syrup to add mild sweetness. Filled with a mixture of finely chopped nuts, sugar, and sometimes cinnamon, Fried Qatayef are a beloved treat showcasing rich culinary traditions and warm hospitality of Egypt.

However, preparing them at home is incredibly simple and quick, taking just a few minutes. Here, I’m sharing my go-to recipe that I always use. Step-by-Step Fried Qatayef Recipe
- Mix the batter ingredients in a bowl. Leave it to rest for 20-30 minutes in a warm place (the batter should be more liquidly).
- In a non-stick pan over medium-high heat. Add a drop of oil & pour the pancake batter nearly 5 cm in diameter (or more, as you like).
- Fry on one side only, for nearly 2 minutes, until you see bubbles on top & till it gets golden brown below. Repeat till you finish the batter.
- Remove pancakes & set them aside to cool. Make sure you keep them in a clean towel, so as not to dry.
- Prepare you nuts mixture, by mixing all ingredients.
To Prepare Sugar Syrup:
- Mix Sugar & water in a saucepan over high heat. When the water starts to boil, add the lemon drops & vanilla essence. Leave to simmer for 2-3 minutes, and then turn off the heat & leave to cool.
- Start filling you pancakes in the middle of the top side of “Atayef” without reaching the edges. Start closing the edged by sticking them together.
- Fry “Atayef” in oil till they get golden brown & crispy on each side.
- Remove from oil & drain then add them to the sugar syrup for 1 minute, then remove from syrup & drain.
- Enjoy with a cup of tea or coffee.

The Pancake Batter
- ½ cup warm Milk (you might need more if the batter is thick)
- 1 tsp. Yeast
- 1 tsp. Sugar
- 1½ cup Flour
- 2 tbsp. Semolina
- 1 tsp. Baking powder
The Filling
- Roasted nuts of your choice (nearly 1-1 ½ cups)
- 2 tbsp. Sugar
- 1 tsp. Cinnamon, optional
The Sugar Syrup
- 1½ cups Water
- 1½ cups Sugar
- few drops of Lemon juice
- 1 tsp. Vanilla essence
- Oil for Frying

How To Make Qatayef
Step 1: Prepare The Batter
- Prepare the pancake batter by mixing all the ingredients listed under "The Pancake Batter" in the ingredients section above, thoroughly in a bowl.
- Allow the batter to rest for 20-30 minutes in a warm spot; it should have a relatively thin consistency.
Step 2: Cook The Pancakes
- Next, heat a non-stick pan over medium-high heat. Add a small amount of oil to the pan. Pour the pancake batter onto the pan, aiming for pancakes about 5 cm in diameter or larger, depending on your preference.
- Cook the pancakes on one side only for approximately 2 minutes or until bubbles start to appear on the surface and the bottom turns a golden brown color.
- Remove the pancakes from the pan and set them aside to cool. Place them on a clean towel to prevent them from drying out. This will help retain their moisture and ensure they stay soft and fluffy until serving.
- Repeat this process until you have used up all the batter, making sure to adjust the heat as needed to prevent burning. This method will ensure each pancake is cooked evenly and has a delightful golden crust.
Step 3: Prepare The Filling
- If your nuts are not already roasted, you can roast them in a dry skillet over medium heat until they are lightly browned and aromatic. Stir frequently to prevent burning.
- Once the nuts are roasted (or if they were pre-roasted), transfer them to a bowl. Grind them coarsely.
- Sprinkle the sugar and cinnamon over the roasted nuts while they are still warm.
- Toss the nuts gently to evenly coat them with the sugar and cinnamon.
Step 4: Prepare Sugar Syrup
- Combine sugar and water in a saucepan and bring to a boil over high heat.
- Once boiling, add lemon drops and vanilla extract.
- Reduce the heat and let it simmer for 2-3 minutes. Remove from heat and allow it to cool.
- Step 5: Assembling Qatayef
- Start by filling pancakes with the bubbly side up.
- Place the filling in the middle pancake without reaching the edges. Start closing the edged by sticking them together.
Step 6: Frying Qatayef
- Fry the "qatayef" in oil until they turn golden brown and crispy on both sides. Once fried, remove them from the oil and drain any excess oil.
- Next, immerse the fried "qatayef" in the sugar syrup for about 1 minute, allowing them to absorb the sweet flavor. Remove from the syrup and let any excess syrup drain off.
- Finally, savor these delightful treats alongside a cup of tea or coffee.
