{Ramadan Special} – Chicken Baked Wanton by Ainy of ‘Ainy Cooks’

As the blessed month of Ramadan approaches, it is time to warm up and get ready to enjoy the exceptionally spiritual, soul-nourishing experience of Ramadan.
I am grateful to Lubna for gathering us again on one Dastarkhawan with our recipes for this Month. I have selected this IFTAR Time recipe for Lubna’s readers which in my opinion is very easy and delicious. You can serve these in IFTAR PARTIES also. Hope you all will like and enjoy. Keep me in your prayers.
CHICKEN BAKED WANTON/SAMOSA WRAP CUPS
INGREDIENTS:
FOR CHICKEN:
- Boneless chicken cubes 1/2 kg
- Fresh Ginger garlic paste 1 tbsp
- Yogurt 3 tbsp
- Salt to taste
- Red chili flakes 1 tsp
- Lemon juice 1 tbsp
- Cumin seeds roasted and crushed 1 tsp
- Coriander seeds roasted and crushed 1 tsp
- Crushed black pepper 1 tsp
- All spice powder 1/2 tsp (optional)
- Oil 2 tbsp
PREPARATION:
- Marinate chicken for 3-4 hours and then cook in pan. In Ramadan you can marinate chicken and freeze. When you want to cook then thaw and cook.
ASSEMBLING OF CUPS:
INGREDIENTS:
- Samosa/ wanton wraps 20
- Capsicum finely chopped 1/2 cup
- Olives finely sliced 2 tbsp
- Cheese 1 cup shredded.
- Cupcake pan
- Oil for greasing
PREPARATION:
- In a bowl mix chicken , capsicum, olives and half cheese.
- Now grease cupcake pan and lay a small piece of wrap in bottom then on sides of cup.
- (If using wanton wraps then cut square into a rectangle shape means divide it into two halves)
- You can use 3-4 strips/ wraps to make a cup.
- Fill in the cup with chicken and spread cheese on it.
- You can sprinkle mixed hers also.
- Bake at 180c till cheese melts and nice brown color of wraps appears.
- Serve with ketchup or any sauce.
