{Ramadan Special} – Palooda – A Malabar Classic drink by Nadira of ‘Nadi’s Culinary Journey’
Last Friday of the holy month Ramadan is called ‘Jumma Tul Wida’ and considered as most pious day. On this day Muslims round the globe pray to Allah SWT for blessing us with this glorious month of Ramadan and to bless us with this glory every year. Have you ever tried a drink with onions/shallots in it??? Even I never tried one with onions/shallots. In today’s post Nadira of ‘Nadi’s Culinary Journey‘ is sharing with us a classic and delicious Malabar drink, Palooda which have deep fried onions as garnish. Just 3 days back we have seen a different version of Palooda (Paaloodha), but this recipe by Nadira is quiet different from that. Do try this out and I am sure you gonna love it. This was something I wished to do for long after seeing so many senior bloggers doing guest posts (Meant in terms of years of blogging experience ;-)..) and you made my day by inviting for the event. Let’s come to today’s recipe. Since I am from northern Malabar-Kannur, thought to share one of Kannur’s special hot drink where we call it “Palooda”. I guess this drink got this name because it is made with milk (Pal – in Malayalam). It’s just my guess. There would be some regional difference in names, but this is very easy and delicious drink which goes well on Iftar table. We make this as welcome drink for parties and marriages as well. Addition of cashew nut makes it very rich and tasty and cardamom powder gives that authentic flavor. Tempering of onion and cashew in ghee takes this simple drink to the next level. You can prepare this in a jiffy. Here is the recipe!
Palooda – A Malabar Classic drink (Cardamom flavored Warm Cashew Milk)
Serves – 2
INGREDIENTS:
- 2 ½ Cup Milk
- 15 to 18 Cashew nuts + 2 table spoon for tempering
- 2 table spoon All-purpose flour (Maida)
- 1 ½ to 2 table spoon Sugar (or to taste)
- 2 to 3 Cardamom
- 1 table spoon finely chopped Onion/Shallots
- 1 tea spoon Ghee (Clarified butter)
PREPARATION:
- Soak the cashew nuts for 2 to 3 hours and grind it to smooth paste with 2 table spoon milk.
- Take ¼ cup milk and add flour and make smooth paste without any lumps.
- In a heavy bottom pan, Take rest of the milk with cashew and flour paste, sugar to taste and mix really well.
- Heat it in a medium to low flame until it just get boiled and slightly thickened. (Make sure not to burn the bottom)
- Add cardamom powder and switch off the flame.
- In a pan heat ghee, add chopped onion and fry until light golden color. Now add cashew and when it changes color slightly, add them to the prepared milk mixture.
- Serve hot.
