About This Recipe
I like breads, I don’t know why… but I really do!
I enjoy trying different kinds of bread, whether they are sweet or savoury. When I was in Bangalore, whenever I passed by Daily Breads or The French Loaf, I would almost always stop to check out the new varieties available. I love experimenting with different fillings and turning simple bread into delicious sandwiches.
And when it comes to lunch, I have to admit that I can be a little lazy. Bread comes in very handy on those days when I don’t feel like cooking an elaborate meal. You can almost always check my refrigerator and find a loaf of bread sitting there.
My Lil’M loves bread too, although her favourites are a little different. Give her bread with Nutella, jam or honey, or turn it into French toast, and she is happy!
A Little Get-Together, A Match and Some Sandwiches
Last evening, a bunch of my cousins dropped by to watch a match on TV with me. It was one of those small, unplanned get-togethers that somehow turn into the most memorable evenings.
We often meet over a match or a movie because we feel the fun doubles when we watch something together. Since we aren’t really allowed to go out to watch movies in the theatre whenever we feel like it, we create our own little theatre experience at home.
Popcorn, chips, homemade snacks, cool drinks and, of course, lots of talking and laughing are all part of the experience. At around seven, one of my cousins suddenly announced that she is really hungry.
“Let’s go out for dinner or order something.” Then came the important condition. “I am not in the mood for rice or roti. I want pizza or something.” And I was not in the mood to go out for eating. The pizza available in my area is usually the thick, dry, chapatti-like kind with an overload of toppings and cheese. So, that wasn’t really tempting me either.
I looked at everyone and said, “Just give me 10 minutes. I’ll get you something.” Everyone immediately joined in. “We’re hungry too!” “Let’s go out. It will take too long to prepare something for all of us.”
I said, “Just give me 15 minutes. I’ll get you something filling and yummy.” They looked at me suspiciously.
“Please no Maggi. We are not in the mood for Maggi.”
I laughed and said, “Nahi yaaroo! I am not making Maggi. I’ll make something different. You will love it. I bet you will lick your fingers!” That got their attention.
“Okay… let’s wait for 15 minutes and see what magic she is going to do in the kitchen.” One of my cousins came into the kitchen to help me. And that’s when the leftover magic began!

Leftover Tandoori Chicken to the Rescue
I had some leftover tandoori chicken in the refrigerator. Leftovers can be a blessing when you know how to transform them. Instead of simply reheating the chicken, I shredded it, tossed it with a little olive oil, pepper and salt, and turned it into a delicious sandwich filling.
My cousin cut the buns horizontally while I got the chicken ready. A little mayonnaise, some crisp iceberg lettuce, sliced onions, juicy cherry tomatoes and the warm shredded chicken were all that I needed.
Within minutes, the sandwiches were ready. The moment I brought the platter out, everyone looked impressed.
“They look perfect!” And after the first bite, there was silence for a few seconds — the good kind of silence that happens when everyone is busy eating.
They loved them! One of my cousins even said, “I think you should start your own sandwich catering business!” We all burst out laughing.
And honestly, that was the best part of the evening. Good food doesn’t always have to involve hours in the kitchen. Sometimes, a few leftovers, some bread and a little imagination are enough to bring everyone around the table.
Why I Love This Tandoori Chicken Club Sandwich
This chicken club sandwich is one of those recipes that proves simple food can be incredibly satisfying.
The bread is soft, the chicken is flavourful and slightly peppery, while the mayonnaise adds creaminess. Crisp lettuce gives it freshness, and the onions and cherry tomatoes add a little crunch and juiciness.
The best part is that you can put it together very quickly. If you already have leftover tandoori chicken, most of the work is done.
It is also a wonderful leftover chicken recipe when you want to turn yesterday’s dinner into today’s lunch without making it feel like leftovers.

What You Need
For this tandoori chicken club sandwich, you don’t need a long list of ingredients.
For the Sandwich
- 2–3 hot dog buns or baguettes, sliced horizontally
- 1 cup shredded tandoori chicken
- ½ tbsp pepper powder
- Salt, as needed
- 1 tbsp olive oil
- 1 tbsp mayonnaise
- 1 tbsp sliced onions
- 3 cherry tomatoes, halved
- 1–2 iceberg lettuce leaves
That’s it!
These simple ingredients come together beautifully and make a satisfying snack, lunch or light dinner.
How to Make Shredded Tandoori Chicken Filling
If you have leftover tandoori chicken, remove any bones and shred the chicken into bite-sized pieces.
Heat 1 tablespoon of olive oil in a heavy-bottomed cooking vessel or kadai.
Add the shredded chicken, pepper powder and a little salt.
Toss everything together over medium heat for 2–3 minutes.
You don’t need to cook the chicken for long. The purpose is simply to warm it through and refresh the flavours.
If your leftover chicken already has plenty of seasoning, taste before adding salt.
The result is a warm, flavourful filling that is perfect for tandoori chicken club sandwich.

How to Assemble the Sandwich
Slice the buns or baguette horizontally without cutting all the way through, if you prefer to keep the sandwich together.
Spread mayonnaise generously on the inside of the bread.
Place a lettuce leaf over the mayonnaise.
Add a generous layer of the warm shredded chicken filling.
Top with sliced onions and halved cherry tomatoes.
Cover with the other half of the bun.
Press gently and serve immediately. That’s it!
Your easy chicken sandwich is ready to enjoy.
Bread Choices for This Recipe
I have used hot dog buns here because they are soft, easy to fill and hold the chicken beautifully.
But you don’t have to stick to them.
You can use:
- Baguette
- Sandwich bread
- Sub rolls
- Dinner rolls
- Burger buns
- Whole wheat bread
- Multigrain bread
If using regular sandwich bread, you can make the filling slightly drier so that the bread doesn’t become soggy.
For a more substantial club sandwich recipe, toasted bread also works beautifully.

Can You Add More Vegetables?
Absolutely. The combination I used is intentionally simple, but you can customise the sandwich depending on what you have in your refrigerator.
Try adding:
- Sliced cucumber
- Shredded cabbage
- Grated carrot
- Capsicum
- Jalapeños
- Pickled onions
- Sliced bell peppers
- Sweet corn
You can also add a slice of cheese if you want a richer sandwich. For a spicy kick, mix a little chilli sauce or hot sauce with the mayonnaise. For a fresh flavour, add some chopped coriander or mint.
Make It Your Own
One of the reasons I love sandwiches is that there are no strict rules. The filling can change depending on what you have available. Have leftover grilled chicken? Use it.
Have leftover kebabs? Shred them and use them. Have some roast chicken from yesterday’s dinner? That works too.
The basic idea is simple — take leftover cooked chicken, add a few fresh ingredients and tuck everything into bread.
This makes it a wonderfully practical leftover chicken sandwich for busy days.
What to Serve With It
These sandwiches are filling enough to serve on their own, but if you are making them for a gathering, you can serve them with a few simple sides.
Crispy potato wedges, French fries, coleslaw, popcorn or a simple salad would all work well.
For a movie or match night, add some chips and chilled drinks and you have a complete spread.
And if you are serving these to children, you can keep the filling mild and offer ketchup or mayonnaise on the side.
Perfect for Match Nights and Movie Evenings
This recipe has a special place in my kitchen because of the memory attached to it. That evening, we didn’t order pizza. We didn’t go out. And I didn’t spend hours cooking.
In about 15 minutes, we had a platter of warm, filling sandwiches sitting in front of us.
There was a match playing on TV, everyone was eating, cousins were laughing and teasing each other, and the kitchen smelled wonderful.
Sometimes these are the evenings I enjoy the most. Nothing fancy. Just food, family, laughter and a little bit of kitchen magic.
A Quick Recipe for Busy Days
This quick chicken sandwich is especially useful when you don’t know what to make for lunch.
If you have leftover tandoori chicken, the recipe comes together almost instantly.
You can also prepare the chicken filling in advance and refrigerate it. When you are ready to eat, simply warm the filling and assemble the sandwich.
It is great for:
- Quick lunches
- Evening snacks
- Kids’ lunch boxes
- Office lunch
- Match-day gatherings
- Movie nights
- Weekend brunch
- Unexpected guests
The recipe is flexible enough to fit into all of these situations.

Frequently Asked Questions
Can I use leftover tandoori chicken?
Yes. In fact, that is exactly what I used for this recipe. Shredding leftover chicken makes it perfect for sandwiches.
Can I use fresh chicken?
Yes. Prepare tandoori chicken as usual, allow it to cool slightly and shred it before assembling the sandwich.
Can I make this sandwich ahead of time?
You can prepare the chicken filling ahead of time, but I recommend assembling the sandwich just before serving so the bread remains fresh.
Can I use regular bread instead of buns?
Definitely. White, whole wheat or multigrain sandwich bread will all work.
Can I add cheese?
Of course. A slice of cheddar, mozzarella or processed cheese will make the sandwich richer and more indulgent.
How can I make it spicy?
Add green chutney, chilli sauce, sliced jalapeños or a little chilli mayonnaise to the sandwich.
Tandoori Chicken Club Sandwich
I always believe leftovers deserve a second chance. With a little creativity, yesterday’s dinner can become something completely new today. That leftover tandoori chicken sitting quietly in the refrigerator doesn’t have to be reheated and served the same way again.
Shred it. Toss it with a little pepper. Add some fresh vegetables. Spread some mayonnaise.
And tuck it between soft bread. That’s all it takes.
So the next time you have leftover tandoori chicken and don’t know what to do with it, remember this sandwich.
It may take only 15 minutes to make, but it can turn an ordinary evening into something special.
Because when hungry cousins are waiting in the living room, you better have some kitchen magic up your sleeve! ❤️

Notes
My Tips for the Best Sandwich
Use good bread: Soft, fresh bread makes a huge difference.
Don't overcook the chicken: The chicken is already cooked, so you only need to warm and refresh it.
Don't skip the lettuce: It gives the sandwich a lovely crisp texture.
Add mayonnaise according to taste: You can use more or less depending on how creamy you like your sandwich.
Assemble just before serving: This keeps the bread fresh and prevents it from becoming soggy.
Use leftovers creatively: Tandoori chicken is my choice here, but other leftover cooked chicken can also work.
