Khajoor | Thekua are deep fried Indian Cookies, which are kid-friendly and mostly served with evening tea. These carry good shelf life too.
Last evening while having tea and gulping piping hot pakoda’s, made by mom…. The conversation on after school snacks started….it all started with ready made and easily available deep fried snacks. In the process my mom told me, how she is use to make a different snack everyday at home during my school ….Then I remembered these Khajoor which my mom use to make mostly during our festival holidays or as after school snack.
Over the growing years, I missed eating these as they are deep fried and mom use to make these rarely. But today when the conversation started on this, I asked my mom to make these as Lil’M has got sweet tooth….and daily giving her something new in her snack box or as after school snack is a tedious job. I really wonder those days, I have never cared for any recipe my mom made…always gulped them…
I studied in a missionary school and proud to say that we never had extra study hours or tuition. We were encouraged to prepare our notes from class seven. Me and my sister usually use to come back home by four in the
evening. My mom made it a point to drop down the bags at the study table after removing shoes and socks and keeping them on shoe rack. She use to give us a glass of water and then we use to rush to take bath. After that my mom use to serve piping hot homemade snacks or sweets or cookies like these. There are many childhood favourite sweets which I love to devour till date…but among all I like these more…as they are not so sweet in taste and the heavenly aroma of cardamom lifts your spirits. My mom use to make these when we are visiting friends or relatives. She even makes these to carry with us on train trips or to family picnics. I find these very indulging and yum.

Khajoor | Thekua Recipe
INGREDIENTS:
- 1 cup whole Wheat flour
- ½ cup Semolina
- ½ tbsp. Baking Soda
- 1 cup Sugar
- ½ tbsp. Green Cardamom | Elachi powder
- ¾ cup Milk
- 3 tbsp. Ghee, melted
- 3 tbsp. Cashew nuts, fried and roughly chopped
- Oil, fro deep frying
How to make Khajoor
PREPARATION:
- In wide bowl mix whole wheat flour with semolina, baking soda, sugar, cardamom powder and fried cashew nuts. Mix well. Add ghee slowly and using your fingers mix gently until you get crumbs.
- Now slowly add in milk and knead the dough gently with your fingers till you get thick dough. Rest the dough for 15 minutes by covering.
- Heat oil in a heavy bottom cooking vessel or kadai for deep frying and in the meanwhile using your fingers knead the dough until you get smooth dough easy enough to roll.
- Apply ghee/oil to the rolling surface and pin. Roll the dough to 1’inch thick circle and using a knife cut into diamonds. Alternatively you can use cookie cutter to cut into desired shapes or you can make pattern
using fork. - Deep fry the cut diamonds by dropping by one by one in to hot oil. Fry till brown on both the sides. Remember not to burn them. Fry on low flame for 2-3 minutes and then on medium till done. You can see cracks forming on the diamonds.
- Remove using a slotted spoon to remove excess oil. Cool and store in an air tight container.
- These can stay fresh for 4-5 days when stored in a clean and dry air tight container.
- Add love to make these Khajoor taste ‘Yummy’.

NOTES:
- Adjust milk depending on the dough. Adjust sugar as per your taste.
- You can even powder and add sugar. But traditional at my house these are made like this.
- You can even add small chunks of deep fried dry coconut pieces instead of cashew nuts.
- You can even add roasted and powdered fennel seed powder instead of cardamom powder for aroma and flavour.
