When Lubna from Yummy Food asked me to join her Joy From Fasting to Feasting – VI, an event to celebrate holy month of Ramadan by sharing our favorite recipe, Es Timun (Iced Cucumber Drink) is all I have in mind, because it was my late father’s fav. By the way, this is my 2nd time joining this event after the 1st one in 2008. Es Timun has been an official drink for iftar in our home since I was a kid. Like I said above, it was my father’s fav, but frankly I did not like it back then because I hate cucumber. But things have changed when my father was not around anymore, especially during Ramadan. I started to like Es Timun and knew why it is his fav.
Es Timun (Iced Cucumber Drink)
- 6 medium sized cucumbers, peeled, shaved and set aside (you can discard the seed if you like)
- 600 ml water
- 4 tbsp granulated sugar (you can adjust the amount according to your taste)
- 1 pandan leaf
- Ice cubes as needed
How to make Es Timun
- Bring water, sugar and pandan leaf to a boil until sugar dissolved over medium heat. Remove from the heat and cool down at room temperature.
- Add cucumber shaved and ice cubes in a glass, pour into simple syrup and serve.
