By now, Ramadan is gently moving towards its most festive days. In many homes, the air already feels different. There is excitement, nostalgia and there is a beautiful kind of chaos.
Shopping lists are getting longer, new clothes are being picked with care, homes are being cleaned and decorated. Hands are adorned with fresh henna, special bowls, plates, and cutlery are taken out, washed, and kept ready for Eid.
In the kitchen, preparations slowly begin. Semiya is roasted to a perfect golden hue. Dry fruits are chopped and stored. Masalas are ground fresh. Favorite family recipes are discussed and planned.
Eid may still be a little away, but the celebrations have already begun. And somewhere between all of this, we still need to prepare something for iftar. Simple, quick, yet special enough to break the fast with joy.

A few weeks into Ramadan, many of us reach a familiar stage. The excitement of samosas and pakoras slowly begins to wear off. They are delicious, no doubt. But sometimes, we crave something lighter, baked and little different.
That is exactly how these Eggplant & Boursin Tartlets came to be a regular feature in my kitchen. They are simple, full of flavour and require just three main ingredients. Five, if you count salt and chilli flakes.
This recipe is especially for eggplant lovers. Oven-roast the eggplant until it is soft and smoky. Gently season it, spoon it onto puff pastry rounds, top with creamy Boursin, and bake until the pastry turns golden and flaky. The result? crisp base, soft, savoury topping and little bursts of creamy, herby cheese in every bite. They look fancy, but trust me, they are incredibly easy to make.

Eggplant & Boursin Tartlets Recipe
Golden, flaky puff pastry meets creamy Boursin and perfectly roasted eggplant in these easy, elegant tartlets. They’re crisp on the outside, soft and savoury inside, with a gentle kick from chilli flakes and a hint of fresh thyme.
Ingredients
- 2 sheets Puff pastry
- 1 large Eggplant
- 3 tbsp Boursin cheese
- 1 beaten Egg + 1 tbsp of water (for the egg wash)
- Salt & Chilli Flakes
- 1 tbsp. Pine nuts, optional
- 1 tbsp. Thyme, optional
Instructions
How To Make Eggplant & Boursin Tartlets
- Preheat the oven to 375 degrees F. Line a baking sheet with parchment paper.
- Slice the eggplant into ¼ inch rounds, drizzle with olive oil and roast it at 400 F for 15-17 minutes
- Once it is cool enough to handle dice it into small pieces
- Preheat oven to 375 and line a baking sheet with parchment paper
- Cut rounds out of your puff pastry sheet. I used a 3 inch cutter but you can use a round glass or top of a jar
- Lightly brush egg wash over each round
- Scatter a scant spoonful of diced eggplant onto each round
- Dot with crumbled up boursin.
- Bake for 15-20 minutes till the puff pastry is golden brown.
- Sprinkle with chilli flakes and enjoy! If using. add roasted pine nuts and thyme for garnish.
- To reheat simply pop them in the oven at 325 for a few minutes.

- Mushroom & Thyme: Swap eggplant with sautéed mushrooms for an earthy flavour.

- Tomato & Basil: Add finely chopped sun-dried tomatoes and finish with fresh basil.
- Spicy Harissa: Stir a little harissa or chilli paste into the eggplant for heat.
