Drumstick Raw Mango in Coconut Gravy Recipe

A true taste of South Indian summer, this Drumstick Raw Mango in Coconut Gravy is tangy, mildly spiced, and full of flavor. Tender drumsticks and tart raw mango slices are simmered in a creamy coconut-based gravy, making it the perfect side dish for hot rice.
Ingredients
- 2 Drumsticks, peeled and cut into 3” inch long even pieces
- 3 medium size Onion
- 1 medium sized Raw Mango, peeled and cut into cubes
- 3 tbsp. Dry Coconut powder
- ¼ tbsp. Coriander powder
- 1 tbsp. Red chili powder
- ½ tbsp. Turmeric powder
- 2 tbsp. minced fresh Coriander leaves
- Salt
- Oil
Instructions
How To Make Drumstick Raw Mango Coconut Curry
- Take 2 onions. Peel and roughly slice them. Add these slices to mixer jar.
- To this add dry coconut powder, coriander powder, red chili powder, turmeric and salt.
- Grind and make a smooth paste by adding half a cup of water.
- Slice the remaining one onion and set aside.
- In a pan or skillet, add oil and when it is warm, add above sliced onion. Fry till translucent.
- To this add above ground coconut masala and fry till raw smell of coconut disappears nearly for 2-3 minutes.
- Now add drumstick pieces and gently give the mixture a stir.
- Add one cup of water and cook on low flame by covering the vessel for 10-15 minutes or till the drumsticks are cooked to soft.
- Once the drumstick pieces turn soft, add raw mango pieces and cook for another 5 minutes or until the mango pieces turn soft.
- Adjust the water and check for seasoning. Garnish with fresh coriander and serve with hot white rice and your choice of dal.

Tips for Best Results
- Choose firm raw mangoes – Use green, unripe mangoes with a sharp tang for the best flavor. Overripe ones will make the curry sweet and mushy.

- Dry coconut vs. fresh – While dry coconut powder is convenient, you can blend fresh grated coconut with a little water for a richer, more traditional taste.
