If there is no leftover aloo curry and you are in a mood to spend little more time on cooking then here is a simple recipe for you. If you are a vegan then aloo paratha’s are fulfilling and satisfying meal to include in your menu.
Ingredients:
- 2 medium-sized Potatoes, boiled and mashed
- 1 tbsp. Oil
- 1 small Onion, finely chopped
- ½ tsp. roasted Cumin powder
- 1 Green chili, finely chopped (optional)
- ½ tsp. Turmeric powder
- Salt to taste
- 2 tbsp. fresh Coriander leaves, chopped
- ½ tsp. Red chili powder, optional
Potato Stuffing For Parathas
- Heat oil in a pan and add chopped onions and sauté until golden brown.
- Add green chili and cook for a minute until fragrant.
- Add turmeric powder, roasted cumin powder, and red chili powder (if using). Stir well.

- ½ tbsp Red chili powder

How To Make Curried Aloo Paratha
- In a bowl, combine wheat flour, a tablespoon of oil, a pinch of salt, and water. Knead into a smooth dough, cover it, and let it rest for 15 minutes.
- While the dough rests, prepare small, lemon-sized balls from the aloo curry and set them aside.
- Divide the dough into equal portions, each about the size of a tennis ball. Roll each portion into a 4-inch circle, lightly dusting with flour to prevent sticking.
- Place an aloo curry ball in the center of the rolled-out dough. Bring the edges of the dough to the center, pinch to seal, and press gently.
- Roll it out again into a 1-inch thick circle, focusing on even edges and dusting with flour as needed.
- Heat a non-stick pan and cook the paratha, greasing it lightly with oil, until golden brown spots appear on both sides.
- Transfer to a kitchen towel or tissue to remove excess oil.
- Repeat the process for the remaining parathas.
