Does this cross your mind when you read the title of today’s post….Coconut mein lassi milake, aa jao sare mood banake, a very famous dance beat number from the movie Chennai Express. Then get refreshed with a simple yet delightful recipe of ‘Coconut Lassi’. Of many recipes I learnt here in Chennai, this Coconut Lassi is one of my personal favourite. Being from South India coconut is always been an integral part of our cooking, but after moving to Chennai only I came across many different recipes with this sweet and creamy nature’s delight ‘Coconut’.
Coconut Lassi
INGREDIENTS:
- 1 cup thick, plain Coconut milk yogurt
- 2 ½ cups Coconut water
- 1 tbsp. Sugar, optional
- 2 tbsp. Coconut meat | malai
- 2 tbsp. Lemon juice
- Mint leaves, for garnish
- Ice as required
How to make Vegan Coconut Lassi
PREPARATION:
- In a mixer jar whip curd with coconut water, honey, coconut meat and lemon juice until frothy.
- Add ice cubes to the serving glasses and pour the contents of mixer jar.
- Garnish with mint leaves and serve chilled.
- Add love to make this Coconut Lassi taste ‘Yummy’.

Ohhh I’ve never heard of this before but it sounds and looks amazing. Do you just drink it on it’s own or do you usually have it with something traditional?

Chelsea….It can be either the way…you can drink it as just a drink or you can serve with any traditional meal.
