{Ramadan Special} – Besan Ladoo by Shaheen of ‘Spoon Fork and Food’
Ramadan is not only about fasting from sunrise to sunset but also about reciting quran and doing namaz. As 21, 23, 25, 27 and 29 nights of Ramadan are considered auspicious as the mubarak ‘Shab-e-Khadar (Lailat-ul-Qadr)’ falls on any one these nights…The night of power, the night when the first verses of the Quran was revealed on Muhammed SWT. Handy recipes like this are much useful when we are fasting and have school going kids at home. You can make these ahead and have good shelf like, which makes our work easy. We can even serve these at iftar time or can pack these as Edible Eid Gifts to teachers, colleagues and friends. Besan Ladoo is an Indian dessert commonly made in Indian homes especially during special occasions, festivals or celebrations. Roasted gram flour is shaped into sweet balls and garnished with nuts has a great shelf life and can be stored or carried long distance without getting spoiled. I often make besan ladoo at home, especially during Ramadan. A great dessert to company your Iftar snacks, Besan ladoo is one aromatic Indian Mithai which is loved by all.
Besan Ladoo
Yields: 15 ladoo’s
Preparation time: 10 minutes
Cooking time: 20 minutes
Cuisine: Indian
INGREDIENTS:
- 2 cup Besan/Gram flour
- 1 cup Powdered Sugar
- 3/4 cup Ghee/Clarified butter
- 1 tsp. Cardamom powder
- 10 Golden raisins
- 15 Cashews
PREPARATION:
- Melt butter and keep aside.
- Dry roast besan in low heat by stirring continuously for 12-15 mins till its golden evenly.
- Add melted ghee and keep stirring in low heat till you smell a strong aroma and the ghee starts leaving the sides.
- Turn off the gas and add powdered sugar, cardamom powder and golden raisins. Mix well to break the lumps.
- Let the mix rest and cool till room temperature.
- Pinch a lemon sized portion and roll between your palm to shape it a round and smooth ball.
- Place a cashew half on the centre.
- Make more ladoos from the rest of the mix and store them all in a cool dry place.
Note: You can also add chopped nuts along with raisins to get a nutty texture.
