Warm welcome to the passengers boarding on Kitchen Flavours. It is going to be a flavourful and yum ride as we are going to land on a hot tourist destination Sri Lanka. Sri Lanka is multi-religious and multi-ethnic country with rich flora and fauna. Sri Lanka is bundle of surprises with breadth taking landscapes, beautiful beaches, luxuriant monuments, rich heritage and mystifying wildlife. More on Sri Lankan tourism can be found here. Staple food of Sri Lanka is rice. Fresh coconut and curry leaves are more commonly used ingredient’s in Sri Lankan Cuisine. As Siri of Siri’s Corner calls for Sri Lankan vegetarian recipes for AWED, my google search took me here. The coconut/pol roti catch my attention and in the next minute the bookmarked it. Some days back I gave it a try it turned out to be simply yum. If you are tired of eating the same routine roti’s then try this for a change and you will definitely like it. Sri Lankan coconut roti is simple to make with handy ingredients. Soft texture is just melt in mouth. Where crunchy fresh grated coconut give an extra taste, the spicy green chilies flavour it.
Pol Roti
INGREDIENTS:
- 2 cups all purpose Flour (maida)
- 1 Onion, peeled and chopped finely
- 2 Green chilies, deseeded and chopped finely
- 1 cup fresh grated Coconut
- 6-9 fresh Curry leaves
- Water
- Salt
PREPARATION:

In a bowl mix grated coconut, green chillies, onions, curry leaves and salt. Using your hand nicely mix in the ingredients till juices are released.

Start adding the flour and bind the mixture. Add little water at a time and knead the dough. Knead till you get the normal roti dough consistency.

By applying oil to your palms, divide the dough into 3-4 equal size balls.

Take one ball at a time and gently roll into roti by applying little flour on either side. Roll till you get normal roti shape with nice even borders.

Heat pan and place this roti, cook on either sides till it turn light brown.

Serve hot with desired curry. I served it with Mutter Paneer Masala.

Last but not least add your ‘love’ to make the dish ‘YUMMY’.

For those of us who are not lucky enough to have access to fresh grated coconut, would you suggest a way to use dehydrated coconut? Or coconut milk?
In rural Italy we have wonderful food but not a lot of exotic ingredients!
