According to me food photography and food styling are entirely two different aspects. Food photography needs a good camera and work on knowledge in the field of operating the camera…..but food styling needs brain….the mere thinking of plating a recipe needs, lots of homework to be done. Coming to today’s recipe, it’s a medley of drumsticks (Sahijan | Saragva) and raw mango in creamy and spicy coconut gravy. Flavors are clear and subtle. A perfect accomplishment to go with hot rice. The best side dish recipe when you are running out of ideas in fixing your meal menu.
Drumstick Raw Mango in Coconut Gravy
{Sojni ki Phalli aur Kaire ka Salan | Mulakkada Mamidikaya Koora}
INGREDIENTS:
- 2 Drumsticks, peeled and cut into 3” inch long even pieces
- 1 Onion, finely sliced
- 1 medium sized Raw Mango, peeled and cut into cubes
- 3 tbsp. Dry Coconut powder
- ¼ tbsp. Coriander powder
- 1 tbsp. Red chili powder
- ½ tbsp. Turmeric powder
- 2 tbsp. minced fresh Coriander leaves
- Salt
- Oil
How to make Drumstick Raw Mango in Coconut Gravy
PREPARATION:
- Add oil to a heavy bottom cooking vessel, and when oil heats up add sliced onions and fry till translucent. Now add dry coconut powder, coriander powder, red chili powder, turmeric and salt.
- Fry till raw smell of coconut disappears nearly 2-3 minutes. Now add drumstick pieces and gently give the mixture a stir.
- Add one cup of water and cook on low flame by covering the vessel for 10-15 minutes or till the drumsticks are cooked to soft.
- Now add raw mango pieces and cook for another 5 minutes or until the mango pieces turn soft. Adjust the water and check for seasoning. Garnish with fresh coriander and serve with hot white rice and your choice of dal.
- Last but not least add your ‘love’ to make the dish ‘YUMMY’.
