What is Muharram?

Muharram is the first month of the Islamic calendar and considered to be highly religious, only coming next to Ramadan.

Muharram ka Sharbat | Hyderabad special doodh ka sherbet is a popular drink specially made on Muharram day.  This is a heirloom drink recipe. Do give this a try!

Recipe

– ½ lit. Milk – 50 g Almonds – 25 g Pistachio – ½ cup Sugar – ¼ tbsp. Cardamom powder – 1 tbsp. Almond flakes FOR TEMPERING: – pinch of Oudh | Agarwood powder – 1 Coal piece

Step 1

Soak almonds in water for 1 hour. Peel the skin of almonds and grind to coarse paste by adding pistachio.

When the milk starts to boil, lower the flame and add coarsely ground almond and pistachio paste.

Add ground paste along with sugar. Stir till milk comes to boil. Reduce the flame and cook till milk slightly thickens.

Agarwood | Oud is key ingredient in making this sherbet. This will give woody, aromatic and smoky taste to the drink.

Step 5

Heat coal by placing it on the stove top.  Carefully using twigs place burning coal onto a small steel/iron plate/bowl

Grab the empty bowl in one hand and sprinkle pinch of oudh onto the burning coal and invert the bowl on it.

By doing so the aromatic smoke coming from the oudh will be collected in the bowl.

Garnish with almond flakes and serve chilled.
