Days back I was checking mails sipping my morning tea….my sis who was watching Tom & Jerry (out of no choice) with my Lil’M asked me…what you are going to prepare for lunch? This is quite a routine question from her most of the days….I said I am still thinking….suggest if you have anything in mind or want to eat anything specific….this is also a routine answer from me….She always says your wish make anything…I am just asking….I am used to this answer…but that day she said why don’t you make vada pav in lunch…isn’t it boring to eat rice everyday….? As I was not expecting such a answer from her…I turned my head to look at her….She smiled and said…please make vada pav for lunch….hearing this Lil’M also said I will have pav pav….make it mamma…..jaldi (quick)….
I have never tried making vada pav at home….but I don’t want to say no to my sweet sis….as she rarely asks for anything….Actually vada pav is my favourite too….but always had at Goli Vada Pav….never even thought of making it at home….I just googled the recipe…and in the search list I found Chef Sanjeev Kapoor’s video where he is making vada pav….I just had a glanced and found out that the vada which is sandwiched between the buns is nothing but aloo bonda….so with the recipe in mind and taste on tongue…I started making my own version….which is simple

I asked my sis to get pav from the grocery store…which is just opposite to my house…..and started frying out the vada’s….with in no time….I assembled vada pav and gave her to eat….and told her thanks….with question mark face she started at me….I told her…It is only because of you I tried making Vada Pav at home….otherwise I would have never made these….She was like really….wow Dudi…that’s what she calls me….you rock…I can’t make the difference between this vada pav made by you and the one we have outside….it’s so tasty….why don’t you click pictures to post on your blog……Blushing me started arranging for the photoshoot with my mouth filled with vada pav and heart filled with pride….
INGREDIENTS:
- 4 Pavs/Buns, i used store bought ones
FOR MAKING VADA’S (ALOO BONDA):
- 2 big Potatoes, peeled, boiled and mashed
- 1 Green chili, chopped
- 1 tbsp. Red chili powder
- ¼ tbsp. Turmeric powder
- 1 tbsp. minced Coriander leaves
- 1 tbsp. Lemon juice
- Salt
TEMPERING/TADKA:
- ½ tbsp. Cumin/Jeera
- Oil
FOR OUTER COATING:
- ½ cup Chickpea flour /Besan
- ½ tbsp. Red chili powder
- pinch Turmeric powder
- pinch Cooking soda
- Salt
FOR RED CHILI – GARLIC POWDER:
- 1 tbsp. Red chili powder
- 2 tbsp. Dry Coconut
- 3 cloves Garlic
- 1½ tbsp. Peanuts
- Salt
- Oil
OTHER INGREDIENTS:
- 2 tbsp. Tomato Sauce
- 3 tbsp. Green chili Sauce
- 4-6 Green chilies for frying
PREPARATION:
MAKING VADAS (ALOO BONDA):
- In a bowl whisk in chickpea flour, red chili powder, turmeric powder, salt and cooking soda by adding water and give the mixture a thick coating consistency.
- In a kadai/heavy bottom cooking vessel, heat oil and add cumin seeds when they start to splutter, add mashed potatoes, red chili powder, turmeric powder, salt and chopped green chili.
- Give the mixture a nice stir and add lemon juice along with minced coriander leaves.
- Turn off the flame and leave it to cool. Once the mixture gets cool, make small balls out of it and set aside.
- Heat enough oil in heavy bottom cooking vessel and dip each ball into the batter. Coat evenly and carefully drop the ball into the hot oil. Fry until nice golden brown.
- Repeat the process until all the mashed potato balls are fried. Take them out on to kitchen tissue or towel. Vada’s are ready to assemble.
MAKING RED CHILI-GARLIC POWDER:
- Pulse the ingredients (except oil) mentioned under red chili-garlic chutney for 2-3 seconds.
- Now add oil in a heavy bottom cooking vessel and add the above ground mixture. Turn up and down. Remove and set aside.
FRYING GREEN CHILIES:
- Just make a small slit in the green chilies and deep fry until they just start to turn color. Remove and place on kitchen tissue/towel and sprinkle salt when still hot.
OTHER INGREDIENTS:
- Mix red tomato sauce and green chili sauce. Keep aside.
ASSEMBLING:
- Now slit the pavs (buns) horizontally without cutting through, apply mixed sauce and sprinkle little red chili-garlic powder and place the fried vada.
- Serve hot with choice of chutney or sauce or simply with fried green chili.
- Last but not least add your ‘love’ to make the dish ‘YUMMY’.
