{Ramadan Special} – Saffron & Dates Granola with Cardamom Milk by Huma of ‘Gheza e Shiriin’

This year I am going to share the recipe for Suhoor (Pre dawn meal), which is gracing our dastarkhwan since few years. While there is much importance given to iftar meals, one should not forget suhoor. As narrated in Al Bhukhari, the Prophet (PUBH) said, “Eat Suhoor , for in Suhoor this is a blessing of Allah & one should not skip it. Even having a sip of water, Allah & his angels sends blessing on those who eat suhoor.
The recipe I am sharing today is Granola which is nutritious, flavorful and calming. There are three main ingredients in this recipe are dry dates, saffron & cardamom. I have paired these flavors with granola.
While saffron adds the delicious aroma & flavor. Dry dates gives the energy to sustain for a day long fast. And cardamom flavored milk is the soothing factor. Use of dry dates is optional. We can use fresh dates. But only add while consuming it. Meaning add in the chopped dates while serving.
Saffron & Dates Granola can be stored up to a month. I usually make my stock for 15 days and for next 15 days it is another flavor. To the recipe
Saffron & Dates Granola with Cardamom Milk
Makes: about 200 gm
- 125 gms. Oats (steel cut or old fashioned)
- 5 tbsp honey
- 3 tbsp brown sugar
- ¼ tsp saffron crushed
- 25 gms. almond flakes
- 25 gm dry dates (Chuara) deseed & chopped to small pcs
- 5 gm flax seeds (optional)
For Cardamom Milk (Based on Single serving)
- 100 ml Milk
- 2 -3 pods of cardamom
PREPARATION:
- Pre heat the oven for about 10 minutes @ 160 degrees. Line the tray with baking sheet
- Mix together all the ingredients in the oat until combined
- Spread the prepared mix on the lined tray.
- Place the tray in the oven & bake for 10 minutes or until toasted.
- From time to time check the granola when in oven as it has the tendency to burn quickly. Check notes.
- Cool completed & break into clumps and store in an airtight jar.
For CARDAMOM MILK:
- In a bowl, pour milk. Add in cardamom pods. Simmer for 5 to 10 minutes. Cool.
SERVING:
In a bowl add 3 to 4 tbsp of saffron & Dates Granola. Pour over the prepared chilled cardamom milk. Rest a minute or so to gel in both the flavors. Enjoy.
NOTE:
- While baking granola, oven should be at a moderate temperature. Not too hot.
- Keep rotating the tray.
- Granola can be made in a pan on the gas flame. Mix together all the ingredients & spread on a non stick pan. Roast turning time to time.
- Texture of granola will be soft when removed from oven or flame. It will crisp as it cools.
