Main Ingredient To Make Penne Pasta With Chicken & Peas
Green Peas – You can use fresh or frozen peas. If using fresh peas, blanch them before using them. If using frozen peas, then thaw them before using.
Penne Pasta – is made with either durum flour or semolina or whole wheat flour. If you are looking out for gluten-free penne, then use penne made of quinoa flour or chickpea flour. You can find smooth and ridged variations in penne. I have used ridged variety of penne in this recipe. You can use smooth one too.
Chicken – Boneless chicken breast is much preferred for making this chicken penne pasta. On a lazy day, I add leftover chicken fry pieces to penne and complete the recipe in no time. It tastes equally delicious.
Cheese – I prefer using mozzarella cheese. You can use cheddar or parmesan depending on the availability.
Pepper & Oregano – Brings flavour and taste in the pasta recipe.
Basic White Sauce or Bechamel – This is a basic sauce used in variety of recipes especially pasta recipes. Combine butter and flour until creamy. This is called roux. Then add milk and make a creamy white sauce. Season with salt and pepper powder. Tada! our white sauce is ready.
You can easily replace all-purpose flour with wheat flour in making white sauce. Will share the recipe of wheat flour white sauce soon.

Chicken Penne Pasta With Peas
Chicken Penne Pasta with Peas is wholesomely delicious one pot meal. Perfect for busy weekday and cozy weekend meal.
Ingredients
- 2 cups uncooked Penne
- 3 tbsp. Butter
- 4 tbsp. frozen Green Peas, thawed
- 1 tbsp. All-purpose flour/ Maida
- 1 cup Milk + ¼ cup Milk
- 3 tbsp. Cheese, Mozzarella
- 1 tbsp. Pepper
- ½ tbsp. Oregano
- Salt
For Chicken
- 1 cup boneless chicken pieces
- Salt
- 1 tbsp. Peppercorns, crushed
- ½ Garlic powder or 2 cloves Garlic, crushed
- ½ Onion powder
- 2 tbsp. OIl
Instructions
Penne Pasta with Chicken and Cheese Recipe
STEP 1: Marinate Chicken
In bowl add chicken pieces and season them with salt, crushed pepper, garlic and onion powder.
Cover and leave this to marinade for 15-30 minutes.
STEP 2: Cooking Chicken
You can cook chicken in three ways. You can either pan-fry, bake or boil the chicken pieces.
For pan-frying, add little oil to a pan and when it heats up add chicken pieces.
Fry on low heat by covering with a lid.
Once the water is absorbed. Stir-fry the chicken pieces on medium flame until they are cooked.
Alternatively, you can bake the chicken pieces by spreading them on a baking tray lined with foil.
Baste oil on top of chicken pieces and bake in preheated oven for 20-30 minutes at 200°C.
For boiling chicken pieces, bring 4 cups of water to boil and add marinated chicken pieces, Boil till chicken pieces turn soft.
STEP 3: Shred the chicken pieces
Once the chicken is cooked, leave this to come down to room temperature and shred the chicken pieces using a fork or knife.
Set this aside.
STEP 4: Cooking Pasta
Bring a large pot of water to boil and cook penne as per the instructions on the packet or until al dente.
When the penne is cooked, turn off the flame and drain excess water using colander. Pour over cool water to stop the process of cooking. Drain completely.
STEP 5: Making White Sauce
Add butter to a pan and add all-purpose flour to it. On a low flame stir until raw smell disappears.
On low flame add in milk slowly by continuously stirring. (I used whisker and it eased my work).
When the sauce start to thicken add cheese. Stir well. (If you end up with lumps, don’t worry, just run the sauce through sieve.)
STEP 6: Cooking Penne with Chicken and Peas
Add shredded chicken pieces to the white sauce. Combine well.
Now add in thawed green peas and cook for 1-2 minutes on low flame.
To this now add cooked penne and using a wooden spoon gently stir on low flame till penne is completely coated with sauce.
If you feel the mixture is thick enough then add extra ¼ cup reserved milk.
Season with salt, pepper and oregano.
Cook for 1-2 minutes by covering with a lid and serve hot by garnishing with fresh minced coriander leaves.
