Pancakes, this word evokes many fond childhood memories. I still remember, how I use to sit on the kitchen slab daggling my legs and watching mom flipping thick pancakes on hot girdle. The aroma which fills the kitchen when pancakes are being made hot is totally mesmerising. Mom use to pour generous amount of honey on my pancakes and I end up licking my fingers. Those were the days I think when mom’s less bothered about weight gain as we kids had lots of activities to do…I use to go for cycling, use to help mom in watering plants, play with friends under the shade of chikoo tree for hours.
As the years pass by, rather than making changes in our lifestyle we made changes in our food habits. We are on a constant look for low calorie, zero sugar, etc., ingredients in the name of healthy options…..and we mostly forget about physical activities which is much more important than healthy food. Blaming on technology or extra study hours we skip the physical activity, which should be priority in nurturing any child. But kudos to the parents who take out time for their children’s extra circular activities after school and really appreciate the schools who come up with interesting ideas for physical activities.
Coming back to today’s pancakes recipe….this is my all-time favourite recipe. Simple ingredients, easy to make steps and super delicious to relish. Though over the years I have tried many variations like adding whole wheat flour, ragi flour, oats flour instead of all-purpose flour, made eggless and fruit punch pancakes…but my heart goes for these fluffy and yummy Old Fashioned Homemade Pancakes. Sometimes it is good to be child again…isn’t it?? Before I get drowned in the nostalgic memories of my childhood, you scroll down and check out the recipe.
Old Fashioned Homemade Pancakes
INGREDIENTS:
- 2 cups all-purpose Flour
- 1½ cups Milk, at room temperature
- ¾ tbsp. Baking powder
- pinch Baking soda
- ½ tbsp. Salt
- ¾ cup Sugar
- 1 tbsp. Vanilla essence
- 1 Egg, beaten
- 3 tbsp. Butter, melted
PREPARATION:
- In a bowl mix together flour, sugar, salt, baking powder and baking soda. (This is our dry ingredients mix.)
- In another bowl gently whisk egg, vanilla essence, butter and milk.
- Slowly start pouring the milk mixture in dry ingredients mix and start whisking gently using a wire whisk until just combined. (The mixture should be thick and lumpy, but should be well combined.)
- Now leave the batter to rest for 15 minutes and in the meantime, heat the pan to medium heat and gently grease it with oil.
- Pour or scoop a big ladle full of batter onto the pan, spread lightly and leave it to cook until bubbles start to appear on top, for nearly 3 minutes.
- Flip and cook for another 2 minutes or more, until pancake turns lightly golden brown.
- Remove onto a plate and serve hot with chocolate sauce or honey.
- Repeat the same above mentioned preparation steps and complete the remaining batter.
- Add love to make the pancakes taste ‘Yummy’.
NOTE:
I drizzled these pancakes with chocolate syrup and sprinkled few colorful edible confetti .

Absolutely love pancakes! These looks totally moorish!! …..I am cutting sugar out of my diet I have not intentionally added sugar to anything for the last 4 weeks, so I’m wondering if I can replace the sugar with Agave syrup?

Yeah you can easily skip sugar and add sweetener or jaggery or agave….thank you…

Pancakes are such a comfort food to me. They remind me of weekends living at home with my parents. I try to recreate my mother’s recipe but fail miserably. I do make a mean oat pancake though. I will give this recipe a shot! Thanks 🙂
