Most of the times, I tell my mom…I can eat Biryani every day if it is served thrice a day too…that’s my love for it…but when I get to eat it twice…I feel or rather say carve for some simple home food…No one can be bored or tried of eating simple food each time a day….When the food is real simple like kunduri dal and kunduri fry…then it’s more yum than eating out biryani at times.
According to me veggies add more flavor to normal dal when cooked combined. There are more combinations of dal’s I make on regular bases of which this is one of my family’s favorite. Most of the weekdays I have dal in my afternoon menu…and this dal should be there at least once a week. When I chopped kunduri’s last afternoon…I felt the pieces are more for dal and so I made fry too along with dal…. Kunduri fry is one of the simple and yum fry which taste best when eaten in combo with dal and rice. Just a hot pot of white steamed rice, dollop of ghee, kunduri dal, kunduri fry along with Andhra red chili pickle and papad…..the most delectable and comforting meal to me…..
KUNDURI DAL
{DONDAKAYA PAPPU | IVY GOURD WITH LENTILS | TINDORA’S WITH LENTILS}
INGREDIENTS:
- 1 ½ cup Toor dal
- 300 gms. Kunduri/Dondakaya/Ivy Gourd, cut into thin rounds
(coin shape) - 1 Onion, sliced
- 1 ripe Tomato, sliced
- 1 Green chili, slit length-wise
- 4-5 tbsp. thick Tamarind extract
- 1 tbsp. Red chili powder
- ¼ tbsp. Turmeric powder
- Salt
TEMPERING/TADKA:
- ½ tbsp. Cumin/Jeera
- ½ tbsp. Mustard seeds
- 2 dry Red chilies
- 2 cloves Garlic, crushed
- 10 Curry leafs
- ¼ tbsp. Asafoetida/Hing
- Oil
How to make Kunduri Dal
PREPARATION:
- Add toor dal, thin rounds of kunduri, sliced onions, sliced tomato pieces, tamarind extract, red chili powder and turmeric powder to pressure cooker and cook for 2-3 whistles by adding 1 cup water (cook till dal is completely soft). Upon cooling mash the dal and set aside.
- In a kadai, add oil and when it heats up add one by one ingredient listed under tempering. Fry till curry leaf’s change colour and this tempering to mashed dal. Cover and leave for 5 minutes.
- Serve hot with steamed white rice along with your choice of fry or papad.
- I served it hot white rice and Kunduri fry (recipe below) and papad.
- Last but not least add your ‘love’ to make the dish ‘YUMMY’.
How to make Kunduri Fry
{DONDAKAYA VEPUDU| IVY GOURD FRY | TINDORA FRY}
INGREDIENTS:
- 200 gms. Kunduri/Dondakaya/Tindoras, cut into thin rounds
- 1 medium sized Onions, sliced
- 1 tbsp. Jeera
- 4-5 cloves Garlic, peeled
- 1 tbsp. Red chili powder
- ¼ tbsp. Turmeric powder
- Salt
- Oil
PREPARATION:
- In a heavy bottom cooking vessel or non-stick kadai, add oil and when it heats up add jeera.
- When jeera starts to splutter, add kunduri pieces, sliced onion, turmeric powder and salt. Mix well and fry on low flame by covering the vessel.
- Mean while, in pestle and motor crush garlic and add red chili powder and make a coarse paste. Set aside.
- Keep stirring kunduri in between. When kunduri is completely cooked, add garlic-red chili powder mixture and gently mix around. Check for salt.
- Cook for another 2 minutes and turn off flame. Serve hot with rice and dal.
- Last but not least add your ‘love’ to make the dish ‘YUMMY’.
NOTES:
- Sometimes I add fresh grated coconut on top before turning off the flame. It gives nice taste to the recipe.
- Sometimes I add roasted and ground peanut and sesame powder before turning off the flame. It gives nice aroma and taste to the recipe.
