{Ramadan Special} – Kaai Kumsi by Femina of ‘Salt n Pepper’
Allhumdulliah we entered third and last stage (Ashara) of ‘Ramadan Fasting’. These last ten days are very auspicious and among one of these nights is Laylah al-Qadr – a night more blessed than a thousand months. The third ashara of Ramadan, is about seeking Refuge in Almighty Allah from Hellfire. And everyone must pray that “O Almighty Allah, save me from the fire of Hell”. Seek for refuge and pray harder. InshaAllah Allah SWT will bless you all.
Moving forward, today we have Femina Shiraz of Salt n Pepper with us. Femina is a ardent food lover who loves to try new flavours. I came across Femina, through a cooking and recipe portal Better Butter. Hoping over to her blog, I came to know she is from Kerala and loves to blog her passion for cooking. I am glad that despite being busy travelling, Femina could take out time to send in her favorite and delicious recipe Kaai Kumsi. I am really honoured and grateful to Lubna for inviting me to join this event called ‘Joy From Fasting To Feasting’. This is my first time contributing to this event, and first time doing a guest post that is going to go live!! I am so excited and happy about this.
I really love this concept of ‘From Fasting to Feasting’. We all know that Ramamdan is not about feasting, but then, we all do prepare something, whether light snacks or meals, for ifthar. This idea of sharing recipes from different parts of the world is really awesome, and we get to learn new things each day. Moreover, people get to know what Ramadan actually is and its significance.
So the glorious month of Ramzan has approached, and all thanks to The Almighty for blessing us with another opportunity to get closer to Him. Yes, this Holy month is indeed a great chance for us to engage ourselves in prayers, dhikrs, charity and good deeds. We keep ourselves busy reciting the Quran and offering prayers. As a kid, me and my siblings always looked upto these 30 days of Ramzan, as my Mother used to prepare delicious food for Ifthar. Back then, it was more of eating than fasting for me 🙂 But as time passed by, and I started fasting, I realised the importance of this Holy month.
To observe fast during the month of Ramzan is one of the 5 pillars of Islam. By engaging ourselves in prayers and keeping away from all evils, we not only cleanse our minds and hearts, but also purify our bodies. Fasting is a great way to decontaminate toxins from our body. No excess eating, in fact, keping away from food and drinks from dawn till dusk.
As a kid, getting up for Seher was one of the most difficult part of Ramzan for me. Don’t get me wrong, I used to find it difficult to wake up for food early morning. But as it is Sunnah to wake up and eat food for Seher, my Mother never allowed us to skip it. And hence we have light food for seher. I prefer roti, but my Mother is fond of having cooked rice soaked in water. Usually we break the fast with dates, fruits and lemon juice, and some light snacks. After prayers, we eat the meal. The Malabar region of Kerala, where I belong to, is well known for its Ifthar dishes.
So here I present to you a very simple snack that could be prepared for iftar – Kaai Kumsi. As you might know, plantains are very popular in Kerala and used excessively in making many delicious dishes. So this dish called Kai Kumsi/ Kaai Kumsi or Steamed Plantain Cake is very easy to make and hence can be made quickly, without much effort. The fried plantain pieces are mixed with eggs and dry fruits and then steamed to form a soft cake. Cardamom and ghee gives this yummy cake a special flavor. It is soft, moist and delicious. KAAI KUMSI
INGREDIENTS:
- 3 Ripe Plantains
- 4 Eggs
- 2 tbsp. Ghee
- 2 tbsp. Coconut oil/any vegetable oil
- 1 tbsp. Raisins
- 1 tbsp. Almonds/Cashew nuts (sliced)
- 1 tsp. Crushed cardamom
- ¼ cup Sugar
PREPARATION:
- Heat ghee and oil in a pan.
- Add the raisins and sauté.
- When they begin to plump up, add the sliced cashew nuts or almonds and fry till golden brown.
- Remove from pan and keep them aside.
- To the same pan, add the diced plantains.
- Fry until they begin to brown a bit.
- Switch the flame off.
- In a bowl, break the eggs and whisk well.
- Add the crushed cardamom and sugar, and mix well.
- Boil water in a steamer.
- Meanwhile, grease a cake tin or any flat bottomed dish.
- Transfer the fried plantain pieces to it. Spread evenly.
- Then pour the egg mixture on top and mix lightly.
- Add the fried raisins and almonds on top.
- Steam for about 15-20 minutes.
- Allow to cool a bit.
- Slice into pieces and enjoy.
NOTE:
- You may use a non-stick pan to cook this dish. Apply ghee/oil to the base and cook closed in low flame.
- You may even bake this dish at 180 degree centigrade for 8-10 minutes, until a toothpick inserted comes out clean.
