Halal To Door’s Perfect Pesto
For this recipe you will need;
• 30g of Pine Nuts
• 4 bunches of basil leaves
• 45g of freshly grated parmesan cheese
• 30g of Pecorino Sardo cheese
• 2 garlic cloves
• 10g of coarse salt
• 75ml of extra virgin olive oil
Let’s get on with those juicy burgers!
Start by grabbing a large bowl, mix together the ingredients for the burger, so that everything from the mince to the shallots to the flat leaf parsley. It’s so easy this could easily be a part of the cooking where you could get the children involved! After mixing, make your hands a little damp and start molding the burgers into desired shapes. The size is entirely up to you but this recipe will create around 4 – 6 moderately large burgers. They need to rest and take form, so leave them on a plate in the fridge for about 20 minutes. This would be the perfect time to start on our perfect pesto!
For the pesto, you need to wash the basil leaves in cold water and dry them out, be careful not to damage the basil as they bruise easily and this can affect flavor and colour later on. In a mortar or a blender, whichever you have to hand, finely crush or blend the garlic cloves and pine nuts until they are of a smooth
consistency. Add the coarse salt and basil leaves then blend the mixture until a bright green liquid is formed, which is then the perfect time to add both the cheeses, along with the extra virgin olive oil to help bind the final ingredients!
Now you have your pesto ready it’s time to start cooking those burgers, cook the burgers on a pre heated grill or oven, at around 200c, 180c fan assisted oven or Gas mark 6 for about 12 – 15 minutes or until the meat juices run clear.
For a perfect burger, serve with freshly baked rolls and crispy salad leaves on a bed of relish, smothered in pesto!
