{Ramadan Special} – Stuffed Egg Fry by Resna of ‘Resna’s Tasty Home’
On iftar table along with dates, fruits, juices,….you find many appetizers in which egg recipe like egg pakoda, egg bonda etc will play main role….In today’s post Resna of Resna’s Tasty Home has come up with an interesting and yum recipe of Stuffed Egg Fry. I am so glad to be here on a well-known blogger Lubna’s space. When she asked me to do a Ramadan post I was so happy that she noticed me as blogger but I was not sure that I could do it, the main reason I am not a regular blogger. There is so many things not letting me to do blogging. But I didn’t want to skip this opportunity from my hand so one fine day I replied her. I told her my problems and she agreed to wait. Probably I am the last person send her recipe this late, she patiently waited for me.
Sorry I forgot to introduce myself I am Resna Nishad blogging at resna’s tasty home.
I am from Malabar region, a northern part of Kerala. Now I am in Qatar with my family to pursue my doctoral degree. More than anything I am so proud that I am from Malabar that is why I emphasised the term ‘Malabar’. We have our own distinct flavour that you can’t find in any other places in Kerala and India. I grow with lots of flavours and memories especially Ramadan memories. Ramadan was the month I waited every year as a kid. This was the time we all kids can meet and spend together. Wherever we lived, during this holy month we all reached into one house my father’s family house, that was a joint family. Now the house is still there as a memory but all are living in different places. As a kid my main priority was so many foods we get during iftar. We all broke fast together, we ate together and we prayed together. That is a good memory new generation never going to know.
I was wondering what to give Lubna’s Ramadan event, I wanted to give some snack item. After long internal fight I decided this fried item. Oily food during iftar is not so good for health but one is ok I think J. I know Lubna is a good photographer, my photo will not suit in her elegant blog. But take a picture with four-month old baby is a big task. So hope you won’t mind my bad photography. Okay now we can move to the recipe – Stuffed egg fry.
STUFFED EGG FRY
INGREDIENTS:
- 4 boiled Eggs
- 2 Onion
- 2 green Chilli
- 2 Garlic cloves
- 1 small piece Ginger (1 inch)
- ¾ tsp Garam masala
- ½ tsp Turmeric powder
- ½ tsp Pepper powder (crushed)
- Curry leaves
- Salt to taste
- 1 ½ tbsp. Oil
FOR BATTER:
- ¾ Wheat flour or All-purpose flour
- 3 tbsp Rice flour
- ½- ¾ tsp Chilli powder
- ½ tsp Turmeric powder
- Salt to taste
- Oil for deep fry (I used extra virgin olive oil)
PREPARATION:
- First cut the boiled egg into two half pieces. Then separate the egg yolk, smash it and keep aside
- Take a pan add oil into it, heat it at medium high flame then add thinly sliced onion. Sauté it well
- Then add crushed ginger and garlic followed by green chilli and curry leaves, saute it well
- Once the raw taste of ginger and garlic is gone add garam masala, turmeric powder, pepper powder and salt. Mix all well and cook for 2-3 minutes at low flame.
- Switch off the flame and add smashed egg yolks into it. Mix well
- Once the prepared mixture cooled enough, stuff this mixture into egg.
TIME FOR BATTER:
- Mix wheat flour, rice flour, chilli powder, turmeric powder and salt. Add enough water to make thick batter.
DEEP FRY:
- Dip the stuffed egg into the batter and deep fry in hot oil at medium high flame till it become golden brown color.
- Drain excess oil and keep in kitchen towel. Serve hot.
