{Ramadan Special} – Pizza Rolls by Nusrath of ‘The Food Factory’
Today we have Nusrath of ‘The Food Factory‘, who is been part of this event since last year. Nusrath has come up with an interesting idea of pizza rolls. These can be a good iftar snack and can be served to children who are not fasting and always get missed out on Iftar table.

Alhamdulillah its Ramadan again and another series of Joy from fasting to feasting -by Lubna Karim of Yummy Food . It’s always a pleasure to be a part of this Ramadan series. Jazak Allah khair Lubna for inviting me this year too for the global event.
As everyone knows Ramadan is a month of bounties .Every single deed reaps you the ajar of 1000 deeds. Unlike back home where we have a domestic help to assist in the daily chores. Staying in the Middle East you are a one man army .You got to do everything by yourself. So a little bit of planning helps in executing your services better. The same implies for Ramadan as well.So I try and make the arrangements for iftar and dinner prior the iftar time so that I can spend the last precious hours in ibadah. This following hadith throws light on ibadah in the last hour before iftar.
“Whatever is prayed for at the time of breaking the fast is granted and never refused.” [Tirmidhi]
Explanation
Iftar at Nusrath’s House
Many people miss the opportunity of making du’a at the moment of breaking the fast, i.e. at the very last moment of Asr, before the Adhan is called for Maghrib. This is due to the fact that most people are busy preparing their food for the Iftar, and are preoccupied in putting out the food on the table or are engaged in other acts, and then the very last moments just before the Adhan for Maghrib are usually spent in futile activity just to pass time, or people idly wait around doing nothing just waiting for the time of Iftar. This is a great deprivation, as this is a very blessed moment in which duas are accepted. The last moments of the fast should be spent making much dua and beseeching Allah (swt) for His mercy and blessings, for forgiveness and for the fulfilment of one’s needs etc….
So today’s recipe is one of a kind which can be made ahead and keeps you away from the guilt of munching on fried food during iftar ,which is very common. A savoury item is mandatory on the iftar table in our home. These pizza rolls are no fuss and require simple pantry ingredients .Just make ahead before iftar and spend your time in ibadah.
Pizza Rolls
Serves: 8 rolls
INGREDIENTS:
For dough:
- 1 1/4 cups All purpose flour
- 1 tsp. Yeast
- 3/4 tsp. Olive oil
- 1/2 tsp. Honey
- 1/4 tsp. Oregano
- 1/4 tsp. Salt
- 1/2 cup Water (Luke warm)
For stuffing:
- 15 Olives
- 2 tbsp. each-Veggies of your choice (capsicum, carrot, onion)
- 100 grams Mozzarella cheese (grated)
- 1/4 tsp. Oregano
- 1/4 tsp. Chili flakes
- 2 tbsp. Tomato ketchup/pizza sauce
How to make Pizza Rolls
PREPARATION:
- Mix all the ingredients listed under “dough “and knead soft dough.
- Cover it and keep it in a warm place until doubles in size.
- This may take from 45 minutes to 1 hour. Now take the dough and roll it flat with the help of a rolling pin.
- Apply the tomato ketchup all over the dough. Mix all the ingredients listed under “stuffing” in a bowl.
- Place it along the length of the dough.
- Holding one end roll it tightly towards you. Cut it in roundels of desired size and arrange it in a cake tin.
- Cover and keep in a warm place for 1/2 an hour to rise.
- Bake it in a preheated oven at 180 c for 15 -20 minutes.
